Corn Chowder

In a saute pan over med. heat, cook the bacon, stirring occasionally, until browned and crisp, 4-5 min
- 4 bacon slices, minced
- 1 yellow onion, chopped
- 6 cups milk
- 2 russet potatoes, peeled and diced
- 12 ears of corn, kernels removed. 6 corncobs reserved
- 1/4 cup fresh chives
- salt to taste
- Cayenne pepper to taste
Sweet Potato Casserole

If using freah sweet potatoes
- 4 med. sweet potatoes or 2 15 oz. cans
- Veg. oil spray
- 1/4 cup fresh orange juice
- 2 Tbs. chopped walnuts
- 1/4 tsp. ground nutmeg
- 1/4 tsp. brandy flavoring
Wine Punch II

Simmer the water and cinnamon sticks for 5 minutes
- 1 cup of water
- 3 sticks of cinnamon
- 2 (6 oz.) cans of frozen grape juice
- 2 (6 oz.) cans of frozen grapefruit juice
- 1/2 cup of lemon juice
- 2 cups of Mogan David Concord Wine
- 1 bottle of ginger ale, chilled
Shredded Potatoes au Gratin

Preheat oven to 350 degrees
- 4 cups (1 lb.) refrigerated shredded hash-brown
- potatoes or frozen hash-brown pot., thawed
- 2 cups whipping cream
- 1 1/2 cups shredded Chedder cheese, divided
- 1/4 cup os sliced green onions (about 4 medium)
- 1 tsp. salt
- 1/4 tsp. black pepper
Taco Dip

- 1 8 oz. pkg. sour cream
Toll House Crumb Cake

Topping: Preheat oven to 350 degrees
- Topping:
- 1 Tbs. all purpose flour
- 1/2 cup brown sugar, firmly packed
- 2 Tbs. butter, softened
- 1/2 cup chopped nu4s
- 1 pkg. Nestle Toll House Morsels (12 oz.)
- Cake:
- 2 cups all purpose flour
- 1 tsp, baking powder
- 1 tsp. baking soda
- 1/2 tsp. salt
- 1/2 cup butter, softened
- 1 cup sugar
- 1 tsp. vanilla extract
- 3 eggs
- 1 cup sour cream
Mango Salad

Combine salad ingredients in a bowl
- Dressing:
- 1 mango, cut into 1/2 in. cubes
- 1 avacado, cut into 1/2 in. cubes
- 1 gr. onion, finely chopped, green section only
- 1/4 cup, cilantro, finely chopped
- 1 tomato, cut into 1/2 in. cubes
- Juice of 2 limes
- 1/4 tsp. salt
- 2 Tbs. olive oil

- 4 oz. pkg. Baker's sweet chocolate
- 5 tbls. butter
- 3 oz. pkg. cream cheese
- 1/4 cup sugar
- 1 egg
- 1 tbls. flour
- 1/2 tsp. vavilla
- 2 eggs
- 3/4 cup sugar
- 1/2 tsp. baking powder
- 1/4 tsp. salt
- 1/2 cup flour
- 1/2 cup chopped nuts
- 1 tsp. vanilla
- 1/4 tsp. almond extract (opt.)
Oatmeal Fruit Muffins

Preheat oven to 400 degrees
- Veg. oil spray
- 1 cup all-purpose flour
- 3/4 cup uncooked quick-cooking or reg. rolled oats
- 1/3 cup toasted wheat germ
- 2 tsp. baking powder
- 1 tsp. ground cinnamon
- 1/2 tsp. baking soda
- 1/8 tsp. salt
- 3/4 cup fat-free milk
- 1/2 cup firmly pack lgt. brown sugar
- Egg substitute equivalent to 1 egg
- 1/4 cup unsweetened applesauce
- 1/2 tsp. vanilla extract
- 1/2 cup snipped dried figs or apricots
Mystery Pie

- 1 tsp. vanilla
