Christmas Sandwich Cremes

Scrambled Egg Casserole

Blueberry Bread

Beat egg and sugar, add orange juice and oil
- 1 egg
- 1 cup of sugar
- 1 tbs. oil
- 2/3 cup of orange juice
- 1/2 cup of chopped nuts
- 1 cup of fresh blueberries
- 2 cups of flour

- 1 1/2 tsp. baking powder
- 1/2 tsp. salt
Italian Wedding Soup

Preheat oven to 350 degrees
- FOR THR MEATBSLLS
- 3/4 lb. ground chicken
- 1/2 lb. chicken sausage, cassing removed
- 2/3 cup white bread crumbs
- 2 tsp. minced garlic (2 cloves)
- 3 Tbs. chopped, fresh parsley
- 1/4 cup freshly grated Pecorino Romano cheese
- 1/4 cup freshly grated Parmesan cheese, plus extra for serving
- 3 Tbs. milk
- 1 extra-large egg, lightly beaten
- Kosher salt and freshly ground black pepper
- FOR THE SOUP
- 2 Tbs. good olive oil
- 1 cup mince yelloe onion
- 1 cup 1/4 in. diced carrots, (3 carrotsS)
- 3/4 cupa 14 in. diced celery (2 stalks)
- 10 cups homemade chicken stock
- 1/2 cup dry white wine
- 1 cup small pasta such as tubetini or stars
- 1/4 cup minced fresh dill
- 12 oz. baby spinach, washed and trimmed
Key Lime Pound Cake

Preheat oven to 325 degrees
- Glaze:
- 1 cup better, softened
- 1/2 cup shortening
- 3 cups sugar
- 6 lg. eggs
- 3 cups all purpose flour
- 1/2 tsp. baking powder
- 1/8 tsp. salt
- 1 cup milk
- 1 tsp. vanilla extract
- 1 tsp. lime zest
- 1/4 cup Key Lime Juice
- Key Lime Glaze
- 1 cup powdered sugar
- 2 Tbs. Key Lime juice
- 1/2 tsp. vanilla extract
Kielbasa Soup

Saute the onion, celery and carrots in the melted butter

- 3 stalks celery, chopped
- 3 grated carrots
- 2-3 Tbs. melted butter
- 1 lb. Kielbasa
- 3 cans sliced white potatpes
- 3 cups water
- 3 Tbs. flour
- 1/2 pt. sour cream
Berry-Peach Cobbler

Heat oven to 400 degrees. Grease 2 qt
- Biscuits:
- 1 1/4 cups all purpose flour
- 1/3 cup sugar
- 1 1/2 tsp. baking powder
- 1/2 tsp. salt
- 1/4 tsp. ground nutmeg
- 1/4 cup cold butter or marg., cut into pieces
- 1/2 cup milk
- 1 tsp. decorator sugar crystals, if desired.
- Fruit Mixture:
- 3/4 cup sugar
- 2 Tbs. all purpose flour
- 1 cup fresh blueberries
- 1 cup fresh raspberries
- 3 med. peaches, peeled and sliced (about 3 cups)
- 2 tsp. grated lemon peel
- 1 Tbs. lemon juice

- 2 cloves garlic, minced
- 3/4 lb. lean ground beef
- 2 1/2 tbs. chili powder
- 1 tbs. all-purpose flour
- 1 tsp. ground cumin
- 1/2 tsp. salt
- 1/4 tsp. black pepper
- 1 can, 28 oz., whole tomatoes, with juice
- 1 can, 15.5 oz., black beans, rinsed and drained
- 1/2 cup water, optional
- 1 1/2 cups shredded Ceddar or Monterey Jack cheese
- 6 cups corn chips, divided
- For the garnish:
- 1/4 cup minced red onion
- 1 tbs. minced fresh cilantro
- 1 med. tamatillo, finally chopped
