Chicken and rice with corn and sun dried tomatoes

Preheat oven to 350 degrees, with rack in lower third
- 1 whole chicken (3-4 lbs.) cut into 10 pieces
- coarse salt and ground pepper
- 2 tsp. vegetable oil
- 1 small, yellow onion, diced
- 2 garlic cloves, chopped
- 1 small green belle pepper, diced
- 1 tsp. grated lemon zest
- 1/2 tsp. dried oregano
- 1/4 to 1/2 tsp. cayenne pepper
- 1 1/2 cups long grain white rice
- 3 cups of frozen corn (16 oz.)
- 1 cup of sun dried tomatoes, cut into strips
- 2 1/2 cups low-sodium chicken broth or water

- 3/4 cup (1 1/2 sticks) butter, softened
- 1/3 cup of firmly packed light brown sugar
- 1 1/2 tsp. vanilla extract
- 1 1/2 cups of all purpose flour
- 1/8 tsp. cinnamon
- 25 solid chocolate candies
- 1 1/2 tbs. confectioners sugar
- 3/4 tsp. unsweetened cocoa powder

- 3 cups sugar
- 5 cups flour
- 5 tsp. baking soda

- 3 oz. Cheddar cheese (3/4 cup)
- 1/4 cup finely chopped green onions (4 med.)
Cheesy Taco Casserole

- 1 tbs, vegetabke oil
- 1 cup of chopped onion
- 1 3/4 cups (16 oz. jar) Ortega Thick and Creamy Salsa
- 1 1/4 cups (10 oz. can) Ortega Enchilada Sauce
- 1 pkg. (12) Ortega Taco Shells, broken into pieces
- 1 1/2 cups (6 oz.) Sargento ChefStyle Mild Cheddar or Taco Blend Shredded Cheese, divided
- Garnish of Ortega Jalapenos, chopped avacado, sour cream
Dutch Baby with Apple and Cranberry Compote

In a bowl, stir together the apples, cranberries, the 1/4 cup of granulated sugar and the cinnamon
- 2 Pink Lady apples, peeled, cored and cut into 1/4 in. slices
- 3/4 cup, fresh or thawed frozen cranberries
- 1/4 cup, plus 1 Tbs. granulated sugar
- 14 tsp. cilnnamon
- 5 Tbs. unsalted butter
- 1/2 cup, water
- 3 eggs
- 3/4 cup, all purpose flour
- 1/4 tsp. salt
- 3/4 cup, milk
- confectioners sugar for dusting
- Maple syrup for serving
Pizza Peach Pie

Crust: Cream together butter and sugar
- Double the ingredients below
- 1/2 cup of butter
- 1/4 cup of sifted confectioners sugar
- 1 cup sifted all purpose flour
- 1 tbsp. cornstrach
- 2 tbsp. granulated sugar
- 1/2 cup of orange juice
- 1/2 cup of currant jelly-red
- 5 cups of sliced peaches or #2 21/2 cabs sliced
- peaches, well drained
Roasted Sweet-Potato Casserole/ Praline Streusel

Prepare casserole: Lightly coat a 9 X 13 in
- Casserole:
- Veg. oil cooking spray
- 5 lbs. sweet potatoes
- 1/2 cup, fresh orange juice
- 1/2 tsp. fresh, grated orange zest
- 3 lg. eggs, lightly beaten
- 1/2 cup, granulated sugar
- 1 1/2 tsp. baking powder
- 1 1/2 tsp. vanilla
- 2 Tbs. butter
- Praline:
- 2 cups chopped pecans
- 1 cup, firmly packed light or dark brown sugar
- 1/2 cup, butter
- 1 tsp. vanilla
- 1/8 tsp. salt
Sherry-Pecan Cake

Mix ingredients together. Beat for 4 minutes
- 1 pkg. yellow cake mix
- 1 pkg. vanilla instant pudding
- 4 eggs
- 3/4 cup of cooking Sherry
- 3/4 cup Crisco oil
- 3/4 cup of pecans (chopped)
- 3/4 tsp. nutmeg
