Creamy Buttermilk Coleslaw

1. Toss shredded coleslaw and tsp salt in colander set over bowl
- 1/2 head red or green cabbage, cored and shredded (1 lb / 6 cups)
- Salt
- 1/2 cup buttermilk
- 2 tbsp mayonaise
- 2 tbsp sour cream
- 1 small shallot minced, optional
- 1/2 tsp cider vinegar
- 1/2 tsp sugar
- 1/4 tsp Guldens mustard
- 1/8 tsp pepper

- 1 tsp chili powder
- 1 small squirt of siracha
- 1 can of refried beans
- 1 can of diced green chiles (mild)
