- 1/2 small watermelon (about 5 lb)
- 3 Tbsp. salt
- 3/4 cup sugar
- 3/4 cup white vinegar (5A% acidity)

- 3 lb. green tomatoes
- 3 medium onions,m sliced
- 1 small red bell pepper, chopped
- 1/4 cup seeded and finely chopped jalapeno pepper
- 4 1/2 cups white vinegar
- 3 cups sugar
- 2 Tbsp. mustard seeds
- 5 tea. whole peppercorns
- 2 tea. celery seeds
Southwest Watermelon Salad

In a large bowl, combine the watermelon, mangoes, jicama, onion and cilantro
- 4 cups cubed seedless watermelon
- 2 cups cubed peeled mangoes
- 1/2 cup diced peeled jicama
- 3 Tbsp. chopped sweet onion
- 2 Tbsp. minced fresh cilantro
- 2 Tbp. lime juice
- 1 Tbsp. honey
- 1 tea. white balsamic vinegar
- 1 tea. grated lime peel
- 1/8 tea. salt
- dash cayenne pepper
Snack Mix - Chili-LIme Chex Mix

In a larg microwavable bowl, mix cereal, corn nuts, crackers, pretzels and corn chips
- 8 cups corn Chex
- 1 cup corn nuts
- 1 cup bite-size cheese crackers
- 1 cup mini pretzel twists
- 1 cup corn chips
- 6 Tbsp. butter
- 1 Tbsp. lim juice
- 1 tea. lime zest
- 2 tea. chili powder
- 1/2 tea. garlic powder
- 1/2 tea. onion powder
- 1/8 tea. cayenne pepper
Fiesta Tuna Salad Sandwiches

In a large bowl, combine the first 9 ingredients; spread over bread bottoms
- 3 cans (5 oz. each) albacore, drained and flaked
- 1 small red onion, chopped
- 1 med. tomato, chopped
- 1/3 cup reduced-fat mayonnaise
- 1 jalapeno, seeded and finely chopped
- 2 Tbsp. lemon juice
- 1 garlic clove, minced
- 1/2 tea. seafood seasoning
- 1/2 tea. pepper
- 1 loaf ciabatta bread, split
- 1/3 lb. sliced pepper jack cheese
- 6 lettuce leaves

- 2 Tbsp cornstarch
- 1 20 oz. can pineapple chunks, saving the juice
- 1/2 cup Coco Lopez Real Cream of Coconut
- 2 Tbsp. mustard
- 1/4 tea. garlic powder
- 1 green or red pepper, cut into chunks
- 1 8 oz. can water chestnuts, drained and halved
BBQ Chile Sauce (ancho/jalapeno BBQ-like sauce)

- 3/4 cup apple jelly
- 1/3 cup spicy brown mustard
