In a shallow bowl, beat eggs
- 2 eggs
- 1 sleeve saltine crackers, finely crushed
- 1/3 cup flour
- 4 tea. Cajun seasoning, divided (Tony Cachere's)
- 1 1/2 lb. top sirloin steak
- 1/2 spicy brown mustard
- 1/2 cup sour cream
- vegetable oil

Preheat oven to 350 degrees
- 3/4 cup butter, softened
- 1 - 8 oz. pkg. cream cheese, softened
- 1 cup sugar
- 2 eggs
- 3 cups flour

- 1 tea. baking soda
- 1/2 tea. salt
- 1 - 8 oz. can crushed pineapple
- 2 cups pitted Bing cherries, coarsely chopped
- 1 tea. vanilla
- 1 cup coarsely chopped pecans, toasted

- 2 cups chopped or shredded Rotisserie Chicken
- 1/4 cup shredded lettuce
Green Tomato Bread

Combine all ingredients in order
- 1 cup oil
- 3 eggs, beaten
- 2 cup sugar
- 2 tea. vanilla
- 2 cups ground green tomatoes (or 1 cup tomatoes, 1 cup apples)
- 3 cups flour
- 1 tea. salt
- 1 tea. baking soda
- 1 tea. baking powder
- 2 tea. pumpkin pie spice
- Optional: 1 cup chopped nuts, 1 1/2 cup raisins, 2 Tbsp. grated orange peel

- 3 cups coarsely chopped fresh rhubarb (about 12 oz)

Combine orange, lemon zest and juice and water in a large, deep stainless steel saucepan
- 2 1/4 lb. oranges (unpeeled), seeded and thinly sliced
- grated zest and juice of 1 lemon
- 6 cups water
- 3 dried habanero chili peppers (or 6 dried Colorado or New Mexico chili peppers)
- 9 cups sugar
- 8 (8 oz) half pint jars
