Lemon Yogurt Bread

In a large bowl, combine the flour, sugar, salt, baking soda and baking powder
- 1 1/2 cups flour
- 3/4 cup sugar
- 1/2 tea. salt
- 1/2 tea. baking soda
- 1/4 tea. baking powder
- 1 egg
- 1 cup lemon yogurt
- 1/3 cup canola oil
- 1 Tbsp. lemon juice
Tomato Salaed - Marinated Herbed Tomato Salad

Place tomatoes, peppers, onions and olives in a glass serving bowl
- 6 ripe tomatoes, cut into wedges
- 3 bell peppers, slivered (combination of red and yellow)
- 1 sweet onion, slivered
- 1 cup pitted black olives, drained
- 12 oz. fresh mozzarella mini balls
- DRESSING
- 1/3 cup extra virgin olive oil
- 1/4 cup red wine vinegar
- 1/4 cup chopped fresh parsley
- 1/4 cup chopped green onions
- 1/2 tea. salt
- 1/4 tea. pepper
- 1 tea. sugar
- 1 Tbsp. chopped fresh basil (or 1 tea. dried)
- 1 Tbsp. chopped fresh marjoram (or 1 tea. dried)
Spicy Pulled Pork Chili (with Curly's sauceless pulled pork)

Combine all ingredients in a large pot
- 1 tub Curly's sauceless pulled pork, diced
- 2 cans hot chili beans, not drained
- 12 oz. tomato paste
- 2 cans diced tomatoes with chilies
- 2 tea. chili powder
- 1 bottle chili sauce
- 2 large onions, chopped
- 2 large green peppers, chopped
- a dash (or 2) garlic powder
- 2 Tbsp. crushed red peppers
- 2 cups water
- 1 cup Spicy V8 or Bloody Mary mix
- Tabasco to taste
Tuna and Vegetable Pasta Salad

Mix all ingredients. Refrigerate to develop flavors
- Dressing:
- 4 cups pasta
- 4 cups vegetables (artichoke heats, tomato, broccoli, onion)
- 2 - 5 oz. cans tuna packed in water, drained
- 1/2 cup shredded Parmesan cheese
- 1/4 cup chopped soft sun-dried tomatoes
- Ranch or Herb Vinaigrette

Jalapeno Orange Mustard Chicken

Heat oven to 350 degrees. Liberally spray a rack with Pam
- 2 Tbp. Dijon mustard
- 1 Tbsp. orange marmalade
- 1 jalapeno pepper, seeded and minced
- 2 tea. fresh lime juice
- 1 tea. olive oil
- 4 skinless, chicken breasts
Summer Corn Salad

In a small bowl, whisk lime juice, salt, pepper sauce and 4 teaspoons of oil; set aside
- 1 Tbsp. lime juice
- 1/4 tea. salt
- 1/4 tea. hot pepper sauce
- 5 tea. olive oil, divided
- 1 1/2 cups fresh or frozen corn, thawed
- 1 1/2 cups cherry tomatoes, halved
- 1/2 cup finely chopped cucumber
- 1/4 cup finely chopped red onion
- 2 Tbsp. minced fresh basil (or 2 tea. dried)
- 1/4 cup feta cheese, crumbled
Chile and Cheese Tart

Preheat oven to 400 degrees
- 1 Tbsp. olive oil
- 1 small red onion, diced
- 3/4 cup heavy whipping cream
- 2 eggs
- 1 1/2 tea. salt
- 3/4 tea. hot pepper sauce
- 1/4 te3a. pepper
- 8 oz. pkg. shredded sharp cheddar cheese
- 1 7 oz. can diced mild green chiles
- 1 refrigerated 9" deep dish pie crust (do not thaw)
Sweet Potato Casserole with eggnog

Preheat oven to 350 degrees
- 3 cups mashed cooked sweet potatoes (about 2 1/4 #)
- 1/3 cup packed brown sugar
- 1/3 cup egg nog
- 2 Tbsp. melted margarine
- 1 tea. vanilla
- 1/2 tea., salt
- 2 egg whites
- 1/2 cup packed brown sugar
- 1/4 cup flour
- 1 Tbspo. butter or margarine
Dessert - Grilled Peach Cobbler

Heat grill to medium. Cut four 12" squares of foil
- 4 ripe peaches, cored and cut into eighths
- 1 stick butter, cut into small pieces8 Tbsp. brown sugar
- 1 tea. cinnamon
- 1 pint vanilla ice cream, slightly softened
- 1/2 cup granola
- 1/2 cup caramel sauce, heated
