Rhubarb Pineapple Jam (w/ jello)

Makes 6-7 half pints
- 5 cups rhubarb, chopped
- 1 (15 oz) can crushed pineapple, undrained
- 5 cups sugar
- 1 3 oz. pkg. tropical pineapple (or strawberry) jello
Poached Salmon

Fold a 36" piece of foil lengthwise to a width slightly larger than salmon fillet
- 2 lb. salmon fillet, skinned, pin bones removed, and salmon cut to fit in slow cooker
- 4 cups fresh orange juice
- 3 cups Chardonnay wine
- 1 red onion, sliced
- 2 tea. capers
- 1 tea. salt
- RED ONION & CAPER CREAM
- 1/2 cup heavy cream
- 2 Tbsp. sour cream
- 2 Tbsp. fresh orange juice
- 3 Tbsp. minced red onion
- 1 Tbsp. minced capers
- salt and Tabasco sauce to taste
BBQ Sauce (Famous Dave's copy cat)

Heat the vegetable oil in a medium saucepan over medium heat
- 2 Tbsp. vegetable oil
- 3 cloves garlic, smashed
- 1/4 cup tomato paste
- 1 Tbsp. chile powder
- 1 3/4 cups apple cider vinegar
- 1/4 cup molasses
- 2 Tbsp. Worcestershire sauce
- 1 Tbsp. honey
- 1 Tbsp. mustard powder
- 2 tea. instant espresso powder
- pepper
- 1/2 tea. cayenne
- 1 cup ketchup
- 1 cup pineapple preserves
- 1/2 tea. liquid smoke
Pork Loin - Bacon Wrapped, Stuffed Pork Loin

Preheat oven to 350 degrees
- 31/2 lb. pork loin, butterflied
- 1 cup hot and spicy BBQ sauce, divided
- 1/2 poblano pepper, sliced into thin strips
- 1/2 onion, sliced into thin strips
- 6 jalapeno peppers, sliced into thin strips
- 12 thick-cut bacon slices
Cabbage - Red Cabbage with Apple

- 3 bacon strips, diced
- 1 medium onion, chopped
- 1 medium apple, peeled and chopped
- 1 small head red cabbage, chopped
- 1 cup water
- 1/4 cup white wine vinegar
- 1 Tbsp. sugar
- 1/2 tea. salt
Spicy Dipping Sauce

Whisk first 7 ingredients in a small bowl
- 11/2 cup mayonnaise
- 3 Tbsp. coarse-grained mustard
- 2 Tbsp. drained prepared horseradish
- 2 Tbsp. chopped green onions
- 1/2 tea. paprika
- 1/2 tea. cayenne pepper
- 1/2 tea. fresh lemon juice
- salt
- pepper
Corn Summer Salad

In a small bowl, whisk the lime juice, salt, pepper sauce and 4 teaspoons oil; set aside
- 1 Tbsp. lime juice
- 1/4 tea. salt
- 1/4 tea. hot pepper sauce
- 5 tea. olive oil, divided
- 1 1/2 cups fresh or frozen corn, thawed
- 1 1/2 cups cherry tomatoes, halved
- 1/2 cup finely chopped cucumber
- 1/4 cup finely chopped red onion
- 2 Tbsp. minced fresh basil (or 2 tea. dried)
- 1/4 cup crumbled feta cheese
Cranberry-Chili Cream Cheese Spread

- 2 pkgs. (8 oz each) cream cheese, softened
- 1 can (14 oz) whole-berry cranberry sauce
- 1 can (4 oz) chopped green chilies, drained
- 1 green onion, sliced
- 1 Tbsp. lime juice
- 1/2 tea. garlic salt
- 1/2 tea. cayenne pepper
- 1/2 tea. chili powder
- Assorted crackers
Bread Pudding - Rum Raisin

Heat oven to 375 degrees. Butter a shallow 2 to 2 1/2 qt
- Butter for the pan
- 1 medium orange
- 1/2 cup spiced rum
- 1 1/2 cups raisins
- 6 eggs
- 2 cups whole milk
- 1 cup heavy cream
- 1 cup sugar
- 2 tea. vanilla
- 1/2 tea. salt
- 1/4 tea. cinnamon
- 1/4 tea. nutmeg
- 1 lb. egg bread such as brioche or challah, cut into 1 1/2" pieces
Savory Mustard Rubbed Pork
