Tomato, Olive & Mozzarella Salad w/ Basil Vinaigrette

Combine all
- 1 can black olives, cut in half
- 3 cups cherry tomatoes, cut in half
- 1 cup fresh mozzarella pearls, cut in half (or fresh mozz. cut into small pieces)
- 1/2 cup vinaigrette of choice
- 1/2 cup basil, finely chopped
- salt and pepper
Taco Soup

In a soup kettle, brown the ground beer and drain any fat
- Garnishes:
- 1 lb. ground beef
- 2 15 oz.cans black beans, drained and rinsed
- 1 14.5 oz. can corn, drained
- 1 14/5 oz. can diced tomatoes
- 1-3 tea. taco seasoning
- 1 16 oz. container salsa or your preferred heat level
- 1 cup tortilla chips, crumbled
- 1 cup shredded cheese, jack or mozzarella cheese
- 1/2 cup sour cream
Lemon Lime Macaroon Bars

Preheat oven to 350 degrees
- CRUST
- 2 cups sweetened flaked coconut, toasted
- 1 1/2 cup flour
- 3/4 cup powder sugar
- 2 Tbsp. cornstarch
- 1/4 tea. salt
- 1 cup cold butter, cut into chunks
- FILLING
- 1/4 cup flour
- 2 cups sugar
- 4 eggs
- 2 tea. each lemon and lime zest
- 1/4 cup each lemon and lime juice
- Powdered sugar (to sprinkle on top)
Cheesy Cocktail Smokies

Melt butter in a large skillet
- 1 Tbsp. butter
- 1/4 cup chopped onion
- 3/4 cup picante sauce or medium hot salsa
- 1 - 3 oz. pkg. cream cheese
- 4 oz. shredded mild cheddar cheese
- 8 oz. shredded sharp cheddar cheese
- dash of paprika
- 2 - 4 oz. cans chopped green chiles
- dash of Worcestershire sauce
- 1/2 tea. salt
- 3 Tbsp. Paula Deen Hot Sauce or other hot sauce (optional)
- 2 lb. cocktail smokies
- cooking oil spray
- tortilla chips
Smoky Beef Brisket

Coat slow cooker with nonstick cooking spray
- 1 beef brisket, about 3 lbs.
- 1 Tbsp. smoked paprika
- 1 tea. salt
- 1/2 tea. pepper
- 1 large onion, chopped
- 4 cloves garlic, chopped
- 1 can (14.5 oz) stewed tomatoes
- 1 can (14.5 oz) beef broth
- 1/4 cup cider vinegar
- 1/4 cup brown sugar
- 8 hamburger rolls
- pickles
- coleslaw
Potatoes - packets for BBQ

1. Preheat barbecue to medium heat, then scrub potatoes
- large Yukon Gold potatoes, about 1-1/2 lbs (750 g)
- 1 tbsp ( 15 mL) melted butter
- 1/2 cup ( 125 mL) Italian or Caesar dressing (optional)
- 1/2 tsp ( 2 mL) each of salt and black pepper
- null generous pinches ofcayenne pepper and cumin, or dash of Tabasco sauce
- 1/2 cup ( 125 mL) full-flavoured cheese, such as Parmesan, Asiago or fontina

- 3 cups sugar
- 1 cup oil
- 3 eggs, slightly beaten
- 3 cups flour
- 1 tea. salt
- 1/2 tea. baking powder
- 1 tea. soda
- 1/2 tea. cloves*
- 3 tea. cinnamon*
- 1/2 tea. nutmeg*
- 2 cups diced green tomatoes
- 1 tea. vanilla
- 1 cup chopped nuts, optional
- 1-1/2 cups raisins, optional
- 2 Tbsp. grated orange peel
- can sub 2 1/2 tea. pumpkin pie spice
Potatoes - Smashed Salt and Vinegar Roasted Potatoes

In a medium pot, bring potatoes to a boil over high in salted water
- 1 1/2 lb. small round or fingerling potatoes
- coarse salt
- 2 Tbsp. extra-virgin olive oil
- 1/4 cup malt vinegar
aDressing: Houston's Buttermilk Garlic Dressing

Blend all ingredients in blender until smooth
- 2/3 cup sour cream
- 1 cup mayonnaise
- 1/4 tea. crushed garlic
- 1/2 tea. salt
- 1 tea. paprika
- 1/2 tea. pepper
- 2 Tbsp. sugar
- 1 tea. dry mustard
- 1/2 cup buttermilk

In a large saucepan in 5 cups water heat lentils, tomatoes, bay leaves, salt and pepper to boiling
- 1 - 16 oz. pkg. lentils
- 2 - 16 oz. cans tomatoes
- 2 bay leaves
- 1 Tbsp. salt
- 1/4 tea. pepper
- 1 1/2 lb. Kielbasa
- 8 bacon slices
- 1 cup chopped carrots
- 1 cup chopped celery
- 1 med. onion, chopped
