Blueberry Cinnamon Freezer Jam

Makes 4 half-pints
- 5 1/4 cups sugar
- 3 cups crushed blueberries
- 1 tea. cinnamon
- 1 1/75 oz. pkg. regular powdered fruit pectin
- 3/4 cup water
Brussels Sprouts Salad w/ apples, pecans and manchego

Using a mandolin thin slice brussels sprouts
- 1 lb. brussels sprouts, trimmed
- 3 apples
- 1/4 cup fresh lemon juice
- 2 Tbsp. extra-virgin olive oil
- 8 slices thick-cut bacon, cut into 1/2" pieces
- 1 large clove garlic, finely chopped
- 4 tea. dijon mustard
- 3 Tbsp. red win vinegar
- salt and pepper
- 3/4 cup pecan halves, toasted and chopped
- 3 oz. manchego cheese, shaved
Corn - Pickled Corn Rounds

In a stainless-steel pot combine all ingredients except corn
- 1 medium sweet onion, chopped
- 1 large red bell pepper, chopped
- 3/4 cup sugar
- 3 canned chipotle peppers in adobo sauce
- 1 Tbsp. salt
- 1 Tbsp. coriander seeds, crushed
- 1 Tbsp. country Dijon-style mustard
- 4 cloves garlic, smashed
- 6 who;e cloves
- 2 cups white wine vinegar
- 1 cup water
- 1/2 cup unsweetened pineapple juice
- 6 ears fresh corn, cut into 1/2" rounds
Tortellini with Lemon and Brussels Sprouts

In a large pot of boiling salted water, cook brussels sprouts until crisp-tender, about 4 minutes
- salt and pepper
- 1 lb. brussels sprouts, trimmed and quartered
- 3 Tbsp. butter
- 1 medium yellow onion, thinly sliced
- 1 lb. frozen cheese tortellini
- zest and juice from 1 lemon
Corn Relish

I made this. It made 16 half pints
- 10 ears fresh corn (1 ear = about 1 cup)
- 2 cup celery, chopped (4 large stalks)
- 2 cup onion, chopped (1 large)
- 2 cup red pepper, chopped (1 large)
- 1/2 cup jalapeno, chopped (2 medium/large)
- 2 clove garlic, minced
- 1 3/4 cups sugar
- 2 Tbsp. dry mustard
- 1 Tbsp. celery seed
- 1 Tbsp. mustard seed
- 1 Tbsp. salt
- 2 1/2 tea. tumeric
- 3 1/2 cups vinegar
- 1 cup water
Chili and Tomato Oil

Brush pizza dough with the chili oil before putting it on the grill
- 2/3 cup olive oil
- 2 tea. tomato puree (paste)
- 1 Tbsp. dried red chili flakes
Cheesy Chile Rice

Butter a casserole dish and sprinkle with parmesan
- 2 cups cooked rice
- 1/2 cup sour cream
- 1 cup green onions, chopped
- 4 oz. can diced green chiles (drained)
- 1 cup shredded cheddar cheese
- salt and cayenne to taste

- 1/4 cup pineapple juice
- 2 tablespoons fresh lemon juice
- 4 (6-ounce) salmon fillets
- 2 tablespoons brown sugar
- 4 teaspoons chili powder
- 2 teaspoons grated lemon rind
- 3/4 teaspoon ground cumin
- 1/2 teaspoon salt
- 1/4 teaspoon ground cinnamon
- Cooking spray
- Lemon slices (optional)
Sweet Onion Corn Bread

In a skillet over medium heat, saute onion in margarine for 5-10 minutes, until tender
- 1/2 cup sweet onion, chopped
- 2 Tbsp. margarine
- 8 1/2 oz. pkg. Jiffy corn muffin mix, prepare per pkg. directions
- 1/2 cup sour cream
- 1/2 cup shredded sharp cheddar cheese
Sweet Potatoes - Candied with Kahlua

Heat the oven to 350 degrees F
- 5 tablespoons unsalted butter
- 3 pounds sweet potatoes
- Kosher salt
- 1/2 cup chopped pecans
- 1/2 cup coffee flavored liqueur (recommended: Kahlua)
- 1 cup heavy cream
- 3/4 cup dark brown sugar
- 1 (10.5 ounce) bag mini marshmallows
