Rhubarb Apple Bread

Preheat oven to 350 degrees
- 4 eggs
- 1 1/2 cups sugar
- 1/2 cup canola oil
- 1 tea. vanilla
- 3 cups flour
- 4 1/2 tea. baking powder
- 1 tea. salt
- 1 tea. cinnamon
- 1 1/2 cups chopped peeled apple
- 1 1/2 cups finely chopped fresh or frozen rhubarb, thawed
- 1 cup chopped nuts
Meatball Stuffed Shells

Cook the pasta according to package directions; drain and rinse in cold water
- 1 pkg. (12 oz) jumbo pasta shells
- 1 jar (26 oz) spaghetti sauce
- 36 frozen fully cooked Italian meatballs (1/2 oz. each), thawed
- 2 cups (8 oz) shredded mozzarella cheese
French Toast Waffle

Preheat waffle iron. Beat the eggs,cream, sugar, vanilla, cinnamon and salt in a large bowl
- 4 eggs, beaten
- 2 cups heavy cream
- 2 1/2 Tbsp. brown sugar
- 1 1/2 tea. vanilla
- 1 tea. cinnamon
- pinch of salt
- 1 Brioche loaf, cut into 1" slices
- powdered sugar, jelly, whipped cream, fruit and/or syrup
Meatballs - Glazed

In a large saucepan, combine all ingredients
- Meatballs
- 1 cup water
- 1/2 cup chili sauce
- 1/2 cup ketchup
- 1/4 cup maple syrup
- 1/4 cup soy sauce
- 1 1/2 tea. ground allspice
- 1/2 tea. ground mustard
Chicken - Grilled Honey Mustard Chicken Salad

Empty pasta mix into 3 qt
- 1 box. Betty Crocker Suddenly Salad classic pasta salad mix
- 1/2 cup mayonnaise
- 1 Tbsp. honey mustard
- 2 cups cubed grilled chicken (or rotisserie chicken)
- 2 cups washed fresh baby spinach leaves (or favorite chopped lettuce)
- 1 cup cherry tomatoes, halved
- 1 stalk celery, chopped (1/3 cup)
- 1 cup shredded Cheddar cheese (4 oz.)
- 3 hard-cooked eggs, coarsely chopped
- 3 slices bacon, crisply cooked and crumbled
Pumpkin Butter - Spiced Freezer Pumpkin Butter

Makes 4 half-pints
- 2 - 15 oz. cans pumpkin puree
- 1 1/4 cups pure maple syrup
- 1/2 cup apple juice
- 2 Tbsp. lemon juice
- 1 tea. ground ginger
- 1/2 tea. cinnamon
- 1/2 tea. nutmeg
- 1/4 tea. salt
Pickling Brine for Pickled Eggs

- 1 qt. cider vinegar
- 1 qt. water
- 1/2 cup pickling spices
- 1/3 cup pickling salt
- 2 Tbsp. sugar
- 1/2 tea. turmeric
Hash Brown Quiche

Press hash browns between paper towel to remove excess moisture
- 3 cups frozen loose-pack shredded hash browns, thawed
- 1/3 cup butter, melted
- 1 cup diced fully cooked ham
- 1 cup (4 oz) shredded cheddar cheese
- 1/4 cup diced green pepper
- 2 eggs
- 1/2 cup milk
- 1/2 tea. salt
- 1/4 tea. pepper
Zucchini Molasses Bread

Beat eggs; add brown sugar and zucchini
- 3 cups shredded zucchini
- 2 cups brown sugar
- 3 eggs
- 1/2 cup oil
- 2 tea. vanilla
- 1/3 cup molasses
- 4 1/2 cups flour
- 1 tea. salt
- 1 tea. baking powder
- 1 tea. baking soda
- 1 tea. nutmeg
- 1 cup raisins

- 4 oz. Cacique Longaniza Fresca (like beef or pork chorizo)
- 1 cup Cacique Cotija cheese, shredded
