Peanuts - Beer Lovers Peanuts

Heat oil in a 12" skillet over medium heat
- 4 tea. vegetable oil
- 1 Tbsp. Cajun seasoning
- 1/2 tea. ground red pepper (cayenne)
- 4 cups lightly salted dry-roasted peanuts
aDressing: Lemon Parmesan

stir together all of the ingredients except the oil
- 1/4 cup fresh lemon juice
- 2 Tbsp. white wine vinegar
- 1/4 tea. each salt and pepper
- 1 Tbsp. sugar
- 3 Tbsp. finely grated Parmesan
- 1/2 cup extra virgin olive oil
Chicken - Oriental-glazed Chicken

Mix soy sauce, honey, 2 Tbsp
- 1 lb. boneless, skinless chicken breasts
- 1/4 cup soy sauce
- 1/4 cup honey
- 3 Tbsp. vegtable oil
- 2 Tbsp. chili sauce (such as Heinz)
- 1/2 tea. ground ginger
- 1/4 tea. garlic powder
- 1 cup chicken broth
- 1 Tbsp. cornstarch
- 4 cups coleslaw mix
- 3 cups cooked white rice
Sweet Potatoes - Chipotle

Place sweet potatoes in two greased 15x10x1" baking pans
- 3 large sweet potatoes (about 2 1/2 lb), peeled and cut into 1/2" pieces
- 1 cup balsamic vinaigrette, divided
- 1/4 tea. salt
- 1/4 tea. pepper
- 1/3 cup minced fresh cilantro
- 3 Tbsp. honey
- 2 chipotle peppers in adobo sauce, minced
Cuban Sandwich (adds salami)

- Pork:
- 5 lb boneless pork shoulder
- 1/2 cup fresh lime juice
- 1/2 cup fresh orange juice
- 8 large cloves garlic
- 2 teaspoons dried oregano
- Kosher salt
- Fresh ground pepper
- 4 bay leaves
- For the sandwich:
- 1 9" piece Cuban Bread
- 4 thin slices glazed ham (about 4 oz)
- 3-4 thin slices Genoa salami with peppercorns (1 oz)
- 2 thin slices Swiss cheese (1 oz)
- 2 pickle slices
- 1 tbs yellow mustard
- Unsalted butter, softened, for cooking

- 1/4 cup olive oil
- 1 1/2 Tbsp. coarsely chopped flat-leaf parsley

- 2 Tbsp. vegetable oil
- 7 oz. kielbasa (from a 14 oz pkg), sliced into coins
- 1 1/4 lbs. boneless, skinless chicken breast, cut into 1" pieces
- 4 cloves garlic, chopped
- 1 can (14 1/2 oz) stewed tomatoes
- 2 cups chicken broth
- 1 pkg. (8 oz) frozen okra, thawed
- 1 cup water
- 1 tea. dried oregano
- 1/4 tea. salt
- 1/4 tea. pepper
- 1 cup instant rice
- 4 green onions, sliced

- 1/2 to 1 stick butter
- 2/4 cups hot milk

- black pepper
- 1/2 tea. ground allspice
- 1/3 cup red wine vinegar
- 3 Tbsp. red wine vinegar
- 3 Tbsp. molasses
- 2 Tbsp. Worcestershire sauce
- 2 Tbsp. fresh lime juice
- 1/4 cup tomato sauce
- 1 medium ripe mango, peeled, pitted and diced (about 1 1/3 cups)
- 2-3 jalapeno peppers, seeded and minced
