- 4 cups cubed rotisserie chicken
- 2 cups frozen corn, thawed
- 1 cup chopped roasted sweet red peppers
- 1 cup chopped red or sweet onion
- 1 cup minced fresh cilantro
- DRESSING
- 3 tbsp. lime juice
- 3 Tbsp. olive oil
- 4 tea. honey
- 2 tea. cumin
- 1 tea. salt
- 1 tea. chili powder
- 1/2 tea. pepper
Tequila Lime Wings

Preheat oven to 350 degrees
- 1 lb. chicken wings
- 1 Tbsp. salt
- 1 Tbsp. pepper
- 1/2 cup lime juice
- 1/4 cup tequila
- 1 Tbsp. agave nectar
- 1 tea. ground cumin
- 1 tea. adobo sauce
- 1/2 Tbsp. pepper
- 1/2 tea. salt
Meatballs w./ marmalade

In a 3 qt. slow cooker, combine the salad dressing, marmalade, worcestershire sauce and pepper flakes
- 1 bottle (16 oz) Catalina salad dressing
- 1 cup orange marmalade
- 3 Tbsp. Worcestershire saucde3
- 1/2 tea. crushed red pepper flakes
- 1 pkg. (32 oz) frozen fully cooked meatballs, thawed
French Toast - Baked French Toast (cubed bread like bread pudding)

Cut bread into 1" cubes and set aside
- 1 loaf Challa bread
- 8 eggs
- 3 cups plain or vanilla yoghurt
- 2 Tbsp. maple syrup
- 1/4 cup sugar
- 1 tea. kosher salt
- 1 1/2 tea. cinnamon
French Toast - cornflake french toast

Combine milk, eggs, vanilla, nutmeg and sugar
- 1 cup milk
- 4 eggs
- 1 tea. vanilla
- 1/8 tea. nutmeg
- 3 Tbsp. sugar
- 6 1" slices sourdough or french bread
- cornflakes
- melted butter
Caramelized Chipotle Onions

In a large nonstick skillet, melt butter and oil over medium heat
- 2 Tbsp. unsalted butter
- 2 Tbsp. canola oil
- 6 large onions, (thinly sliced)
- 1 chipotle chile in adobo sauce (chopped)
- 1/2 tea.salt
- 1/2 tea. pepper
Jalapeno Honey Glaze for Cornbread

While cornbread is baking, make glaze by slowly heating butter in a saucepan until melted
- 1/2 cup butter
- 1 large jalapeno, minced
- 3 Tbsp. red bell pepper, minced
- 1/4 cup honey
- 1/8 tea. cayenne
Dip - Queso Fundido with Chorizo

Cook chorizo in oil, drain
- 1 Tbsp. oil
- 2 chorizo links, 1/2" dice
- 1 tomato, seeded and chopped
- 1 medium onion, chopped
- 1 jalapeno, diced
- 3 Tbsp. tequila
- 8 oz. Mexican melting cheese , like Chicuahua or asadero (or a combination of sharp cheddar and monterey jack)
- 1/2 cup loosely packed cilantro
Dip - Hot Chicken Artichoke Parmesan Dip

Mix ingredients. Microwave in oven safe glass pie plate on high for 5 minutes
- 1 - 12/5 oz. can chicken breast, drained
- 1 - 15 oz. can artichokes, drained, sque3zed to remove liquid in artichokes, and chopped
- 1 cup mayonnaise
- 1 cup shredded parmesan
- 1 garlic clove, crushed
- 2 green onions, chopped
