Overnight Sausage and Egg Brunch

Spray a 9x13 baking dish with non-stick cooking spray
- 1 lb. turkey Italian sausage links, cut into 1/4" thick slices
- 1 medium onion, chopped
- 1 pkg. (8 oz) light cream cheese
- 1 tea. dried marjoram leaves
- 1/2 tea. salt
- 1/4 tea. cayenne pepper
- 1 cup fat-free egg substitute
- 1 can (12 oz) evaporated skimmed milk
- 9 slices French bread, sliced diagonally 1" thick
- 1 package (16 oz) frozen chopped broccoli, rinsed under hot water to thaw
- 1 cup shredded sharp Cheddar cheese
Marmalade Chicken

Whisk broth, vinegar, marmalade, mustard and cornstarch in a medium bowl
- 1 cup chicken broth
- 2 Tbsp. red wine vinegar
- 2 Tbsp. orange marmalade
- 1 tea., Dijon mustard
- 1 tea. cornstarch
- 1 lb. chicken tenders
- 1/2 tea. salt
- 1/4 tea. pepper
- 6 tea. olive oil, divided
- 2 large shallots, minced
- 1 tea. freshly grated orange zest
Salsa - Drunken Salsa (Mexican Made Easy)

LIghtly toast chilies in a skillet that is not non-stick coated
- 1 pkg. dried pasilla or poblano chilies, stemmed and seeded
- 1 clove garlic
- 1 cup orange juice
- 1/4 cup olive oil
- 1/4 cup tequila
- salt and pepper
Potato-Leek Chowder

Heat oil in a large Dutch oven over medium heat
- 1 Tbsp. olive oil
- 3 cups finely chopped leek (about 4 leeks)
- 5 cups chicken broth
- 3 cups cubed (2") peeled Yukon gold or red potato
- 2 cups chopped (2") cauliflower florets
- 1 cup milk
- 1/4 tea. black pepper
- 1/8 tea. salt
- 1 (14 3/4 oz) can cream-style corn
- 3 bacon slices, cooled and crumbled
Ribs - Honey & Jalpeno Baby Back Ribs

- 6 Tbs. packed brown sugar
- 2 Tbsp. chili powder
- 1 Tbsp. oregano
- 2 1/4 tea. garlic powder
- 1 tea. salt
- 1/4 - 1/2 tea. cayenne
- 1/2 cup ketchup
- 1/3 cup hot pepper jelly
- 2 Tbsp. honey
- 2 slabs baby back ribes (6 lb)
Meatfoaf Burgers (made with Fresh Take Breadcrumb Mix)

Mix all together and shape into 6 - 1/2" patties
- 1 1/2 lb. ground beef
- 1 pkg. Fresh Take Classic Four Cheese Breadcrumb Mix, mixed together
- 1/4 cup finely chopped onions
- 1/2 cup ketchup
Green Tomatoes - Pickled

- 1 cup distilled whit vinegar
- 1 Tbsp. pickling salt
- 6 garlic cloves, peeled
- 3 ta. dill seed, divided
- 3/4 tea. peppercorns, divided
- 3 bay leaves
- 2 pounds green tomatoes, stemmed and cut into wedges

- 3 cloves garlic, finely minced
- 2/3 cup extra-virgin oilve oil

Beat cream cheese and cheddar cheese until light and fluffy
- Garnish:
- 2 pkgs. (8 oz each) cream cheese, softened
- 2 cups grated cheddar cheese
- 2 cups low-fat sour cream, divided
- 1 Tbsp. Santa cruz Chili Powder
- 3 eggs
- 1/2 cup chopped fresh-roasted green chilies
- 2/3 cup Santa Cruz Green Salsa
- .
- 1 avocado, sliced
- 1/2 cup finely chopped red bell pepper
- 1/2 cup chopped fresh cilantro
Waffled French Toast
