- 1 Tbsp. butter, melted
- 4 oz. grilled chicken breast, thinly sliced
- 2 oz. provolone cheese, thinly sliced

- 6 thin slices red onion
- 1 small avocado, sliced
- 12 small roma tomato, thinly sliced
Dip - Pumpkin Pie Dip

In a large bowl, beat cream cheese and confectioners' sugar until smooth
- 1 package (8 ounces) cream cheese, softened
- 2 cups confectioners' sugar
- 1 cup canned pumpkin
- 1/2 cup sour cream
- 1 teaspoon ground cinnamon
- 1 teaspoon pumpkin pie spice
- 1/2 teaspoon ground ginger
- Gingersnap cookies
Rhubarb cake with Lemon Sauce

In a large bowl, cream the butter and sugars until light and fluffy
- CAKE
- 1/2 cup butter, softened
- 1/2 cup sugar
- 1/2 cup packed brown sugar
- 1 egg
- 2 tea. vanilla
- 3 cups flour
- 1 tea. baking powder
- 1 tea. cinnamon
- 1/2 tea. salt
- 1/2 tea. baking soda
- 1 cup buttermilk
- 2 cups chopped fresh or frozen rhubarb
- 1 Tbsp. cinnamon-sugar
- LEMON SAUCE
- 1 cup sugar
- 1/2 cup butter, cubed
- 1/3 cup water
- 3 Tbsp. lemon juice
- 1 egg, beaten
- 1 tea. grated lemon peel
- 1 tea. ground nutmeg
Pumpkin Streusel Loaves

Streusel: in a small bowl, combine first 4 ingredients
- 1 cup butter, softened
- 1 cup sugar
- 1 cup firmly packed brown sugar
- 1 tea. vanilla
- 4 eggs
- 1 (15 oz) can pumpkin
- 2 cups flour
- 1 1/2 tea. baking powder
- 1 1/2 tea. baking soda
- 1 tea. cinnamon
- 3/4 tea. salt
- 3/4 cup buttermilk
- OATMEAL STREUSEL
- 1/4 cup quick-cooking oats
- 1/4 cup flour
- 1/4 cup firmly packed brown sugar
- 1 tea. cinnamon
- 1/4 cup butter, cut into pats
Sweet Potatoes w/ Molasses Glaze

Peel sweet potatoes and slice them lengthwise into 1/23" thick slabs
- 4 medium sweet potatoes (bout 2 lbs)
- 4 Tbsp. molasses
- juice of 1/2 orange
- 1 Tbsp. butter, room temperature
- pinch of allspice
- salt and pepper to taste
Black Beans

Rinse beans. Place beans in a large bowl or Dutch oven
- 1 lb. black beans
- 1 small red onion, chopped
- 1 small carrot, chopped
- 2 whole serano chiles or 1 jalapeno
- 2 bay leaves
- 1 Tbsp. ground cumin
- 1/4 lb. bacon, chopped
- 4 1/4 cups chicken broth
- 1/2 tea. salt
- Pepper

- 4 oz. cream cheese, softened
- 2 Tbsp. chopped canned green chiles
- 1 Tbsp. taco seasoning mix
- 5 (5-6 0z) boneless skinless chicken breast halves
- vegetable oil for frying
- 1 1/4 cup plain cornmeal
- 1 tea. ground cumin
- 1/4 cup taco seasong mix
- 1 tea. salt
- 2 eggs, beaten
- 2 Tbsp. whole milk
- 3/4 cup fresh tomato salsa
Casserole - Healthified Chicken Tortilla Casserole

1.Heat oven to 350°F. Spray 13x9-inch (3-quart) glass baking dish with cooking spray
- 1 can (10 3/4 oz) 98% fat free 45% less sodium condensed cream of chicken soup
- 1 can (4.5 oz) chopped green chiles
- 1 container (8 oz) fat-free sour cream
- 1/2 cup fat-free (skim) milk
- 2 1/2 cups shredded cooked chicken breast
- 8 yellow corn tortillas (6 or 7 inch), torn into bite-size pieces
- 1 medium green bell pepper, chopped (1 cup)
- 1 large tomato, chopped (1 cup)
- 1 1/2 cups shredded sharp Cheddar cheese or Mexican cheese blend (6 oz)

- 8 sweet potatoes (about 4#)
- 1/2 cup packed brown sugar
- 4 slices bacon
- 1 egg
- 2 Tbsp. butter, melted
- 1 tea. cinnamon
- 1/2 tea. salt
- 1/2 tea. chipotle chili pepper
Toasted Ravioli

Spread the ravioli on a baking sheet and freeze until hard, 20-30 minutes
- 3/4 to 1 lb. small fresh ravioli
- 3 large eggs, beaten
- 1 1/2 cups milk
- 2 cups breadcrumbs
- 3 Tbsp. finely chopped fresh parsley
- 1 tea. finely chopped fresh rosemary
- salt and pepper
- vegetable oil, for frying
- 1/2 cup grated parmesan cheese
- Marinara sauce, for dipping
