Tortilla Soup

Heat the tortillas in a low oven to dry them out, about 5 minutes
- 6 - 6 " corn tortillas
- 1/4 cup vegetable oil
- 1 small onion, chopped
- 2 cloves garlic, minced
- 1-2 small jalapeno peppers, seeded and minced
- 4 cups chicken stock
- 1 - 14/5 oz. can fire-roasted diced tomatoes
- 1 / tea. 4/S PEnsey's seasoning salt
- 2 cups shredded, cooked chicken
- 1 ripe avocado, cut into bite-sized pieces
- 1/2 cup shredded Monterey Jack cheese
- 2-4 Tbsp. chopped fresh cilantro
- 1 lime, cut into 6 wedges
Salted Caramel Apple Pie

Line 9" pie plate with crust, trim edges, leaving a 1/4" overhand
- pie crust for a 2 crust pie
- 3 lb. baking apples, such as Gala or Golden Delicious, peeled and cored
- 1 tea. fresh lemon juice
- 1 tea. ground cinnamon
- pinch of ground nutmeg
- 1/4 cup cornstarch
- 1/2 cup Salted Caramel Sauce (recipe below)

- 1 1/2 cups sugar
- 2 tea. sea salt
- 1/2 cup heavy cream
- 1 Tbsp. butter

Upside Down Apple Cake

Preheat oven to 375 degrees
- Apples:
- 1/4 cup (1/2 stick) butter
- 3/4 cup sugar
- 1/4 cup molasses (optional)
- 3-4 crisp tart apples or pears, peeled, cored and cut into wedges
- Cake:
- 1/2 cup (1 stick) butter, room temperature
- 2/3 cup sugar
- 1 tea. vanilla
- 2 eggs, room temperature
- 1 1/2 cups flour
- 1/2 cup cornmeal
- 1 1/2 tea. baking powder
- 1 tea. salt
- 1/2 tea. cinnamon
- 1 cup buttermilk or yogurt
French Toast - Individual French Toast Stratas (in muffin cups)

Whisk eggs, half-and-half, syrup, vanilla, cinnamon and salt
- 6 eggs
- 1 1/2 cups half-and-half
- 6 Tbsp. maple syrup
- 1 1/2 tea. vanilla
- 1 tea. cinnamon
- large pinch salt
- 4 cups cubed (1") white country bread
- 2 Tbsp. melted butter
- 2 Tbsp. sugar
Chicken Fricassee with red wine, tomatoes and olives

Baked in charcoal grill in an aluminum foil pan
- 1 whole chicken, cut into pieces (about 2 3/4 lbs)
- 3 Tbsp. barbecue seasoning
- 1 disposable foil pan (9x13)
- 4 cups grape tomatoes, halved
- 1 14/5 oz. can diced tomatoes with basil, garlic and oregano, undrained
- 1 cup pimiento-stuffed green olives
- 1 cup chopped onion (1 medium)
- 3/4 cup dry red wine
- 1 Tbsp. finely shredded lemon peel (set aside0

- 1/2 cup mayonnaise

- 1 - 6 oz. can solid white albacore tuna
- 1/4 cup diced mushrooms
- 1/4 cup finely diced onion
Beets - Orange Glazed Beets

In a large skillet, combine the first five ingredients
- 3/4 cup orange marmalade
- 6 Tbsp. orange juice
- 1/3 cup butter, cubed
- 1/4 tea. salt
- 1/4 tea. pepper
- 3 cans (14.5 oz) sliced beets, drained
Sausage (Chorizo?) Stuffed BBQ Pork Tenderloin

- 1/2 cup finely chopped onion
- 1/2 (8 oz) pkg. cream cheese
- 1/2 cup plus 2 Tbsp. BBQ sauce, divided

- 1 48 oz. jar Vlasic Zesty Dill Pickles (do not use kosher)
- 2 cups sugar
- 1 Tbsp. Tabasco
- 4 cloves garlic, sliced
Texas Taco Soup

In a Dutch oven, cook beef over medium heat until no longer pink; drain
- 1 1/2 lb. ground beef
- 1 envelope taco seasoning
- 2 cans (15 1/4 oz. each) whole kernel corn, undrained
- 2 cans (15 oz. each) Ranch Style beans (pinto beans in seasoned tomato sauce)
- 2 cans (14 1/2 oz. each) diced tomatoes, undrained
- Shredded cheddar cheese
