Can be used as a relish with cream cheese
- 12 jalapenos, seeded and halves
- 2 ripe tomatoes
- 1 small onion, finely chopped
- 1 green apple, finely grated
- 1/2 cup red wine vinegar
- 1/2 cup sugar
Beef Rolls

In large skillet, heat 1 Tbsp
- 3/4 lb. thin sliced skirt steak, cut into 4 equal pieces
- salt and pepper
- 2 oz. pepper jack cheese, thinly sliced
- 1 cup onion-pepper mixture

Ham and Corn Chowder

In a 3 qt. slow cooker, combine all of the ingredients
- 2 1/2 cups milk
- 1 can (14 3/4 oz) cream style corn
- 1 can condensed cream of mushroom soup, undiluted
- 1 3/4 cups frozen corn
- 1 cup frozen shredded hash brown potatoes
- 1 cup cubed fully cooked ham
- 1 large onion, chopped
- 2 tea. dried parsley flakes
- 2 Tbsp. butter
- salt and pepper to taste
Quick Cranberry Apple Crumble

Preheat oven to 375 degrees
- 1 cup cranberry sauce
- 2 lb. sliced peeled apples
- 2 Tbsp. flour
- 1 Tbsp. sugar
- pinch of salt
- 1/2 tea. vanilla
- 2 Tbsp. butter
- CRUMBLE TOPPING
- 1 stick butter, softened
- 1/2 cup brown sugar
- 3/4 cup flour
- 3/4 cup chopped pecans
- pinch cinnamon
- pinch salt

- 1/2 tea. baking soda

- 1 1/2 cups chopped, seeded ripe tomatoes (3 medium)
- 1/3 cup chopped onion (1 small)
- 1/3 cup coarsely chopped red sweet pepper
- 1/3 cup dried cherries, dried cranberries or raisins
- 1/3 cup white vinegar
- 1/4 cup sugar
- 1/4 cup brown sugar, packed
- 1/4 cup water
- 1 Tbsp. lime or lemon juice
- 1 tea. grated fresh ginger or 1/4 tea. ground ginger
- 1/4 tea. salt
- 2 cloves garlic, minced
- 1 cup fresh rhubarb cut into 1/2" pieces or 1 cup frozen cut rhubarb, thawed and drained
Soup - Sausage and Tortellini Soup

In a 4-5 qt. slow cooker combine undrained tomatoes, water, frozen green beans, onion soup, and turkey sausage
- 2 14 1/2 oz. cans Italian-style stewed tomatoes
- 3 cups water
- 2 cups loose-pack frozen cut green beans or Italian-style green beans
- 1 10 1/2 oz. can condensed French onion soup
- 8 oz. fully cooked smoked turkey sausage, halved lengthwise and cut into 1/2" slices
- 2 cups packaged shredded cabbage with carrot (coleslaw mix)
- 1 9 oz. package refrigerated cheese-filled tortellini
- Parmesan cheese
