Grilled Mozzarella Sandwiches (cut into 1/4 for appetizers)

Cut the bread into 12 slices about 1/2" thick
- 3/4 About 3/4 lb. sourdough or other country-style bread
- 1/4 cup butter, at room temperature
- 3/4 to 1 lb. fresh mozzarella cheese
- 16 fresh rosemary sprigs (to use as skewers)
- salt and pepper
Heath Bar Cake

Prepare cake according to directions on package and bake in a 9x13 baking pan
- 1 chocolate cake mix
- 1 can (14 oz) sweetened condensed milk
- 1 small jar butterscotch topping
- 12 oz. whipped topping
- 4 small Heath or Skor bar, chopped
Short Ribs w/ beer (seen on AZ CH 10 news)

In a large sauce pan sear the short ribs until well browned on all sides, remove from pan
- 4 lb. bone-in short ribs
- 8 guajillo chiles stems removed
- 1 bottle dark mexican beer (Negro Modelo)
- 3 tea. cumin
- 3 tea. pepper
- \2 Tbsp. salt
- 2 Tbsp. oregano
- 4 cups onion, chopped
- 2 Tbsp. garlic, chopped
- 4 cups water
Spinach Salad w/ orange balsamic dressing

Wash and clean spinach. Tear into bite size pieces and place in a serving bowl
- DRESSING:
- 8 oz. fresh spinach
- 1/2 cup feta, crumbled
- 1/4 small red onion, thinly sliced
- 1/2 cup dried cranberries
- 2 Tbsp. toasted sliced almonds, optional
- 1/2 cup bottled balsamic vinaigrette salad dressing
- 2 Tbsp. orange juice
- 1 tea. orange zest, optional
Nuts - Chili Nuts - Crock Pot

Pour butter over nuts in slow cooker
- 1/4 cup melted butter
- 2 - 12 oz. cans cocktail peanuts
- 1 pkg. chili (or taco) seasoning mix

- 1/4 cup butter, melted
- 2 cups milk
- 2 eggs
- 1/2 cup sugar
- 2 tea. vanilla
- 6 cups bread, cubed
- 1 cup chocolate chips, semi or dark chocolate
- cooking spray
Pork Tenderloin - with Sweet and Sour Cabbage

Preheat oven to 450 degrees
- 1 - 1 lb. pork tenderloin
- 1/2 ta. salt
- 2 Tbsp. vegetable oil
- 2 Tbsp. whole-grain mustard
- 2 slices bacon, chopped
- 1 onion, thinly sliced
- 1/2 large head red cabbage, cored and thinly sliced
- 1/4 cup cider vinegar
- 1/4 cup sugar
French Toast - Berry 'n' Cream Stuffed French Toast

In bowl, mix cream cheese, strawberries and jam; spread onto 4 bread slices
- 2/3 cup whipped cream cheese
- 1/2 cup chopped strawberries
- 2 Tbsp. strawberry jam
- 8 slices cinnamon bread
- 2 eggs
- 1/2 cup milk
- 1/2 ta. vanilla
Waffles - Corn Fritter Waffles

In a large bowl, combine the flour, sugar, baking powder and salt
- 2 cups flour
- 2 Tbsp. sugar
- 3 tea. baking powder
- 1/2 tea. salt
- 2 eggs
- 2 cups 2% milk
- 1/2 cup oil
- 1 1/2 cups corn kernels
- 1 cup maple syrup
- 1/4 tea. cayenne

- Tuscan Sunset oil and vinegar dressing:
- mix 1 Tbsp. Tuscan Sunset seasoning with 1 Tbsp. water. Let stand a
- few minutes.
- Add 1/3 cup olive oil and 1/4 cup balsamic vinegar, stir.
- Add 1-2 tea. Dijon mustard to emulsify the dressing
- Tuscan Sunset creamy dressing:
- Mix 1 tea. Tuscan Sunset Seasoning
- 1/4 cup mayonnaise
- 1/4 cup buttermilk
- divide between 2 salads
- Salsa Salad Seasoning (great over tomatoes and mozzarella cheese salad)
- 1-2 Tbsp. salsa salad seasoning
- 2 Tbsp. water
- let stand 5 minutes
- mix with 1/2 cup corn oil
- 1/3 cup fresh lime juice (3 med. limes)
- whisk briskly and refrigerate.
