Ingredients
- 1 TB peanut oil
- 1 cup chopped onion
- 1 1/2 TB minced garlic
- 2 1/2 lb boneless chicken breast, cut into 1" pieces
- 1/3 cup peanut butter
- 1 1/2 tsp curry powder
- 1 tsp salt
- 1 tsp crushed red pepper
- 1/2 tsp black pepper
- 1 (6oz) can tomato paste
- 3 cups plum tomatoes (about 4 tomatoes)
- 2 (14.5oz) cans chicken broth
- cooked rice

Preparation
Step 1
1. Heat oil in a dutch oven. Add onion and garlic until tender.
2. Add chicken until cooked through.
3. Stir in ingredients PB thru tomato paste.
4. Add tomato and broth, simmer about 30 minutes until thickened.
5. Serve with rice and if desired a drop of greek yogurt.
