Chilled Roasted Cantaloupe Soup with Ginger Yogurt and Pomegranate Swirl

- Cantaloupe Soup
- 1 large cantaloupe--peeled, seeded and sliced crosswise into 6 pieces
- One 1-inch piece fresh ginger, peeled (use the edge of a teaspoon to scrape off the skin) and roughly chopped
- 3 tablespoons unsalted butter, at room temperature
- 1/2 cup heavy cream, at room temperature
- 2/3 cup ginger ale, at room temperature
- Juice of 1 lime
- 2 tablespoons granulated sugar
- 1/4 teaspoon kosher salt
- 1/4 cup fresh cilantro leaves
- Ginger Yogurt
- 1/2 cup (2 ounces) candied ginger
- 1/2 cup water
- 1/4 cup granulated sugar
- 1/2 cup plain yogurt

- 1/2 tsp lemon extract

Onion-Smothered Roast Brisket and Vegetables

Cooking Light MARCH 2000
- 1 (2 1/2-pound) beef brisket
- 6 cups thinly sliced onion, separated into rings
- 1 cup bottled chili sauce
- 1/2 cup beer
- 1 tablespoon brown sugar
- 1 tablespoon Worcestershire sauce
- 1 pound carrots, cut into 1 1/2-inch-thick pieces (about 2 cups)
- 1 1/2 pounds red potatoes (about 6), quartered
- 1/2 teaspoon seasoned salt
- 1/2 teaspoon garlic pepper (such as Lawry's)
Gingerbread Cake

- Mix thoroughly:
- 1/2 cup shortening
- 2 tlb sugar
- 1 egg
- Blend In:
- 1 cup dark molasses
- 1 cup baking water
- Sift together & Stir in:

- 1 tsp soda
- 1/2 tsp salt
- 1 tsp ginger
- 1 tsp cinnamon

- 1 tsp ground nutmeg
Honey and Cinnamon Glazed Sweet Potatoes

Preheat oven to 400 degrees In a bowl, add potatoes and onions; set aside
- Topping:
- 4 (813 grams) large sweet potatoes, peeled, sliced into 1/4" chunks
- 1 (212 grams)large onion, sliced about 1/4" thick
- 2 tbsp. olive oil
- 1 tbsp. honey
- 1/2 tsp. cinnamon
- salt & pepper to taste
- 1/4 cub dried cranberries
- 1 tbsp. butter or margarine (I used Earth Balance)
- 1/2 tsp. cinnamon
