Corn Bread with Scallions

1. Preheat the oven to 400°
- 1 1/3 cups all-purpose flour
- 1 cup coarse, stone-ground yellow cornmeal
- 2 teaspoons baking powder
- 1 teaspoon salt
- Pinch of freshly ground pepper
- 1 1/4 cups low-fat milk
- 2 tablespoons honey
- 2 large eggs, beaten
- 1/3 cup plus 1 tablespoon corn oil
- 8 scallions, white and tender green parts only, thinly sliced

- 1 baked 9 inch pie shell
- 1 8 oz pkg cream cheese
- 2 1/2 cups milk
- 1 pkg instant chocolate pie filling
Pumpkin Cheesecake Pie

Preheat oven to 450. Mix together softened cream cheese, sugar and vanilla
- 1 pkg (8 oz) cream cheese
- 1/4 c. sugar
- 1/2 tsp vanilla
- 1 egg
- 1 1/4 c. canned pumpkin
- 1/2 c. sugar
- 1/4 tsp ginger
- 1 tsp cinnamon
- 1/4 tsp nutmeg
- Dash of salt
- 1 c. evaporated milk
- 2 eggs slightly beaten
Crusty Garlic Bread

1. Preheat oven to 350 F
- 2 cloves garlic, minced
- 2 tsp olive oil
- 2 tbsp chopped fresh parsley
- 2 tbsp chopped fresh thyme or 2 tsp dried thyme
- 2 tsp chopped fresh marjoram or 3/4 tsp dried marjoram
- 1/2 tsp paprika
- 2 tbsp grated Parmesan cheese (optional)

- 2 tbsp flour
- 1 tsp salt
- 1/2 tsp mace
- 2 tsp cinnamon
- 1 tsp pumpkin pie spice
- 3 cup canned pumpkin (1 large can)
- 3 cup scalded milk
