Spicy Parmesan Green Beans and Kale

Warm the olive oil in a large, heavy saute pan over medium-high heat
- 3 tablespoons olive oil
- 1 onion, sliced
- 1/4 pound cremini mushrooms, trimmed and quartered (about 14 mushrooms)
- 1 1/2 pounds green beans, trimmed and slice into 1-inch pieces
- 2 teaspoons salt
- 1/2 teaspoon freshly ground black pepper
- 1/4 cup white wine
- 1/2 teaspoon red pepper flakes
- 1 bunch kale (1/2 pound), rinsed, stemmed, and roughly chopped
- 2 tablespoons lemon juice (about 1/2 a lemon)
- 3 tablespoons finely grated Parmesan

- 1 pint cooked Florida blue crab jumbo lump meat, picked over for

- 4 to 8 fresh Florida Portabella mushrooms, 2-3 inch diameter
- 1/3 cup low fat mayonnaise
- 1 egg
- Juice of 1 lemon
- 1 teaspoon Worcestershire sauce
- 1 teaspoon Dijon mustard
- 2 dashes hot pepper sauce (your favorite)
- Sea salt and fresh ground pepper to taste
- 1/8 teaspoon paprika
- 2 tablespoons cracker meal
- Extra Virgin olive oil
- 1/4 cup fresh parsley

- 3 1/2-4 pound chicken legs and thighs
- 1 cup artichoke hearts (halved)
- 1 medium onion (cut into chunks - to match the artichokes)
- 1 pound white button mushrooms (halved or quartered)
- 2 tablespoons brown mustard
- 1 clove garlic (minced)
- 1/4 cup olive oil
- 1/4 cup red wine vinegar
- 1/4 cup red wine
- 1/4 teaspoon dried basil
- 1/4 teaspoon dried thyme
- 1/4 teaspoon dried tarragon
- 1 bay leaf
- salt and pepper (to taste)
