Grilled eggplant slices are sliced and served with an herb-mushroom mixture and tossed with feta cheese
- 1 Medium Eggplant, sliced 1/2" thick
- 1 tsp Salt
- 3 tsp Olive Oil, divided
- 1 tsp Fresh Thyme, finely chopped
- 1 tsp Fresh Oregano, minced
- 1 cup Onion, sliced and quartered
- 1 clove Garlic, minced
- 8 oz Button Mushrooms, sliced
- 1/2 tsp Sea Salt
- 1/4 tsp Cracked Pepper
- 1/3 cup Red Wine
- 8 oz Cherry Tomatoes, halved
- 2 tsp Balsamic Vinegar
- 1 cup Feta Crumbles
- 1/4 cup Fresh Parsley, minced

- 2 packages (.3 ounce each) sugar-free orange gelatin
- Sugar substitute equivalent to 3 tablespoons sugar
- 2 cups boiling water
- 1 can (6 ounces) frozen orange juice concentrate, thawed
- 1 cup cold water
- 1 can (20 ounces) unsweetened pineapple tidbits, drained
- 1 can (11 ounces) mandarin oranges, drained
- 1 cup cold fat-free milk
- 1 package (1 ounce) sugar-free instant vanilla pudding mix
