- 2 cups Bob's Red Mill gluten-free all-purpose baking flour
- 1/2 cup unsweetened cocoa powder
- 1/4 cup cornstarch
- 1 teaspoon baking soda
- 1 teaspoon salt
- 1/4 teaspoon baking powder
- 1/2 cup (1 stick) unsalted butter, softened
- 1/2 cup solid vegetable shortening
- 2/3 cup packed dark-brown sugar
- 2/3 cup granulated sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 1 teaspoon orange zest
- 1 bag (12 ounces) semisweet chocolate morsels
- 1 cup sweetened dried cranberries

To prepare the citrus vinaigrette, cut the citrus sections into 4 – 5 pieces and set aside
- For this recipe you will need:
- Citrus Vinaigrette:
- 1 orange, peeled and sectioned
- 1 lime, peeled and sectioned
- 1 c freshly squeezed orange juice
- 2 tsp freshly squeezed lime juice
- 2 tsp freshly squeezed lemon juice
- 1/4 tsp Dijon-style mustard
- Salt & Pepper, to taste
- 3 tbsp extra virgin olive oil
- Mustard Vinaigrette:
- 2 tsp red wine vinegar
- 1/2 tsp Dijon-style mustard
- Salt & Pepper, to taste
- 2 tbsp extra virgin olive oil
- 4 artichokes
- 1 lemon, cut in half
- Salt & Pepper, to taste
- 1 skinless fillet of salmon (10 – 12 oz)
- 8 large sea scallops (about 12 oz)
- 1 tbsp extra virgin olive oil
- 4 cups loosely packed mixed baby lettuce (about 4 oz), such as oak leaf, mustard greens, bib,
- radicchio, frisee, spinach and arugula
- 1 tsp red peppercorns
