1. Beat first 4 ingredients at medium speed with an electric mixer until creamy

- 1/2 cup raspberries (fresh or frozen)

- 1 (16 oz.) package powdered sugar
Black Beans Refried

Heat olive oil in heavy duty dutch oven type pan
- 1 bag of uncooked black beans, picked over
- 1 32 ounce container of low sodium broth of choice
- 1 smoked ham hock
- 1 large onion diced
- 1large handful of cilantro (include stems)
- 2 tablespoons of olive oil
- 2 cloves of garlic smashed and rough chopped

- 2 cups unsweetened coconut flakes
- 2 egg whites
- 1/2 teaspoon coconut extract
- 1 cup confectioners' sugar

Salmon Caribbean Guava Barbecue Sauce and Mango Veggie Salsa

For the barbecue sauce: Heat the oil in a large skillet over medium-high heat for 1 minute
- BARBECUE SAUCE:
- 3 tablespoons vegetable oil
- 2 yellow onions, chopped
- 8 ounces guava paste, cut into chunks
- 2 tablespoons tomato paste
- 2 tablespoons apple cider vinegar
- 1/4 cup light or dark brown sugar
- 2 whole star anise
- 1/2 teaspoon ground allspice
- 1/4 teaspoon curry powder
- 2 tablespoons lime juice
- 1 tablespoon dark rum
- SALSA:
- 1/2 cup olive oil, plus extra for greasing the baking dish
- 3 garlic cloves, finely minced
- 1/4 cup lime juice (from about 2 limes), plus 2 limes cut into wedges, for serving
- 1 teaspoon salt
- 1 teaspoon freshly ground black pepper
- 2 mangoes, peeled, fruit cut off seed and diced
- 1 red bell pepper, halved, seeded, and finely diced
- 1 whole salmon (31/2-4lbs) cut in pieces
- 1 green bell pepper, halved, seeded and finely diced
- 1 yellow bell pepper, halved, seeded and finely diced
- 1 large red onion, halved and finely chopped
- 1 serrano chile, finely chopped, optional
- 1/2 cup finely chopped fresh cilantro leaves
- 1 (15-ounce) can black beans, drained and rinsed
- 1 whole side salmon (about 3 1/2 to lbs.)

- 2 cups Stone Ground Grits
- 2 1/2 cups Milk
- 2 1/2 cups Chicken Stock (plus more if needed)

- 3/4 pound whole-wheat bowtie (or other shape) pasta
- 1 tablespoon olive oil
- 1/2 medium onion, chopped, about 1 cup
- 3 cloves garlic, minced
- 6 ounces lowfat Italian-style chicken sausage, casings removed, crumbled
- 1 medium head escarole, rinsed, drained and chopped, about 8 cups
- 1 (14-ounce) can low-sodium cannellini beans, drained and rinsed
- 1 1/2 cups low-sodium chicken broth
- 1/2 teaspoon red pepper flakes

- For Flan:
- 2 2 2 cups milk
- 2 2 2 cups half and half
- 3/4 3/4 3/4 cup sugar
- 8 8 4 whole eggs, plus 4 egg yolks
- 1 1 1 tablespoon vanilla extract
- Boiling water, as needed
Oatmeal Pancakes from Scratch

*Depending on how long you've let the oats sit, you may need to add a little extra water to the batter to thin it...
- Try these modifications:
- 1 cup fat free milk (or water)*
- 3/4 cup oatmeal (uncooked, quick or regular oats)
- 3/4 cup oatmeal flour (How to Make Oatmeal Flour)
- 1 tsp baking powder (optional)
- 1/4 tsp salt (optional)
- 4 large egg whites
- 1/2 tsp cinnamon, ground
- Blueberry pancakes: Add 1/4 c blueberries (fresh or thawed) to recipe and omit cinnamon
- Oat-Nut pancakes: Add 1 1/2 tbsp diced pecans, walnuts, or almonds to recipe.
- Whole Grain pancakes: Replace quick oats with hot multigrain cereal. Prepare as directed.
- High protein pancakes: Add 1-2 scoops vanilla protein to batter, increase water.
Mississippi Spiced Pecans

Preheat oven to 350°F. Spread pecans on a large baking sheet
- Make plenty of these mildly sweet and salty nuts—they are great to have on hand over the holidays.
- 1 pound pecan halves
- 1 tablespoon packed dark brown sugar
- 1 1/2 teaspoons kosher salt
- 1 teaspoon chopped fresh thyme
- 1 teaspoon chopped fresh rosemary
- 1/2 teaspoon freshly ground pepper
- 1/2 teaspoon piment d'Espelette, (see Tip) or a pinch of cayenne pepper
- 2 tablespoons extra-virgin olive oil
