- 1 pound whole milk ricotta (preferably fresh), drained overnight

- 1 cup heavy cream
- 1 cup sliced almonds, lightly toasted in the oven

- 1 large egg, lightly beaten
- 2 tbsp fresh lime juice (from about 1 lime)
- 3 tbsp ketchup, plus extra for serving
- 3 garlic cloves, finely minced

- Freshly ground pepper

- 1 teaspoon sea salt
- 2 pinches hot paprika (or chili powder)
- Salad:
- 2 tablespoons lemon juice
- 1/4 cup olive oil
- 1 tablespoon mayonnaise
- 1 teaspoon red wine vinegar
- 1 teaspoon Dijon mustard
- 2 heads romaine lettuce
