Scones My Sister's Favorite Amaretto

- 1/2 cup raisins
- 1 tablespoon Amaretto, or to taste
- 2 cups flour (all-purpose)
- 1/3 cup sugar
- 2 teaspoons baking powder
- 1/2 teaspoon baking soda
- 1/3 cup cold unsalted butter, cut into pieces
- 1 beaten egg
- 1/4 cup milk
- 1/4 cup, plus 2 tablespoons heavy cream
- 1/2 cup chopped walnuts or pecans

In a medium saucepan over medium heat, bring coconut milk, ginger and Craisins to a simmer and cook about 5 minutes
- 1 14 ounce can coconut milk
- 1 tablespoon grated ginger
- 1/3 cup roughly chopped Craisins
- 1 ripe bananas
- 1/2 teaspoon vanilla extract
- 1 cup sweetened dried coconut flakes, toasted
- 2 cups semi sweet chocolate chips

In a large saucepan, heat 2-1/2 cups milk to 175°; stir in the sugar until dissolved
- 6 cups cold 2% milk, divided
- 2 cups sugar
- 4 eggs, lightly beaten
- 1 teaspoon vanilla extract
- 2 packages (3.4 ounces each) instant vanilla pudding mix
- 1 carton (8 ounces) frozen whipped topping, thawed
Fresh Fish Tacos

To prepare the mango salsa, combine all ingredients in mixing bowl
- Tacos:
- 8 corn tortillas, softened
- 8 oz mahi mahi (2 oz per serving)
- Pinch of kosher salt
- 1 large avocado, sliced
- 1 cup arugula
- Chipotle Agave Glaze:
- 1/2 cup olive oil
- 3 cup garlic cloves, peeled
- 3 cans chipotle chiles in adobo sauce, canned
- 3 bunches, cilantro, chopped
- 1 limes, zested
- 1 tbsp agave nectar
- Pinch of kosher salt
- Mango Salsa, optional:
- 1 mango, diced
- 1/2 jalapeno, minced small
- 2 oz red bell pepper, diced
- 1 oz red onion, diced

- 1 tbsp lime juice, fresh squeezed
- 1/4 cup mango puree
- 1/8 cup cilantro, finely chopped
Ginger Ale Homemade

In a small saucepan over medium-high heat, combine water, sugar and ginger
- 1 cup water
- 1 cup sugar
- 1 cup sliced fresh ginger*
- Tip: Peel the ginger, or leave the skin on. It gives the syrup a deeper, richer color.

- 12 small eggplants (a little larger than a bell pepper)
- 12 red bell peppers
- Extra-virgin olive oil, preferably Spanish
- 1 to 2 teaspoons sea salt
- 1 clove garlic, finely minced, optional
- 18 large anchovy fillets, packed in olive oil, preferably Spanish
- Aged sherry vinegar, optional

- 1 10-ounce jar raspberry or strawberry spreadable fruit
- 1/4 cup chopped peanuts
- 1/4 cup shredded coconut
- 3 tablespoons orange juice
- 12 slices firm-textured sandwich white or whole wheat bread
- 3/4 cup peanut butter
- 1/2 cup chopped strawberries, bananas, and/or pineapple

- 2 zucchini (about 1 pound total), halved lengthwise and thinly sliced crosswise
- 2 carrots, thinly sliced
- 1 tablespoon chili powder
- 1 teaspoon ground cumin
- 2 cans (19 ounces each) black beans, rinsed and drained
- 1 can (28 ounces) crushed tomatoes
- 1 package (10 ounces) frozen corn kernels, thawed
