- CRUST
- 2/3 cup all-purpose flour
- 1/3 cup whole-wheat flour
- 1 teaspoon sugar
- 1/2 teaspoon salt
- 6 tablespoons (3/4 stick) cold butter, cut into pieces
- 2 teaspoons cider vinegar
- 2 tablespoons ice water
- FILLING
- 1 1/2 cups canned pumpkin puree (not pumpkin-pie filling)
- 2 large eggs
- 1/2 cup pure maple syrup
- 1/2 cup milk
- 1 teaspoon vanilla extract
- 1/4 teaspoon salt
- TOPPING (OPTIONAL)
- 1/2 cup reduced-fat sour cream
