- 8 ounces cream cheese, reduced fat would also work
- 2 cups plus 1 tablespoon sugar
- 6 extra-large eggs, room temp
- 4 cups all-purpose flour, sifted (16 ounces)*
- 1/2 teaspoon kosher salt
- 1 teaspoon baking powder
- 1 tablespoon plus 1/2 cup coconut milk
- 1 cup Craisins
- 1/2 cup shredded, dessicated coconut, toasted, divided
- 1/2 cup powdered sugar
