When a warm summer night entices you to dine outdoors, try these healthy barbecue ideas with a Mediterranean twist
- 1 medium eggplant, about 1 pound, cut crosswise into 8 slices, each about 3/4 inch thick
- Coarse salt
- 2 small shallots, sliced crosswise, 1/4-inch thick
- 1 garlic clove, minced
- 1 tablespoon sugar
- 3 tablespoons sherry-wine vinegar
- 1/4 teaspoon red-pepper flakes
- 2 tablespoons golden raisins
- 1 tablespoon capers, rinsed
- 4 Gaeta olives, pitted and coarsely chopped
- 1/4 cup plus 4 teaspoons extra-virgin olive oil
- Vegetable oil, for grill

- 3 sheets of phyllo, thawed if frozen
- 2 teaspoons plus 1 tablespoon sugar
- 2 McIntosh or other firm apples, peeled and cut into 1/2-inch wedges
- 1 tablespoon fresh lemon juice
- 1/4 cup apple juice
- 1 tablespoon butter, plus 2 teaspoons melted butter, for brushing phyllo
- 1 tablespoon Cognac or apple juice
- Pinch of ground ginger
- Pinch of cinnamon
- Finely chopped crystallized ginger

1. Cook pasta according to package directions
- Prep: 40 minutes
- Chill: 2 to 24 hours
- 12 oz. dried mostaccioli or penne (about 4 cups uncooked)
- 2 cups cherry tomatoes, quartered
- 1 medium cucumber, halved lengthwise and sliced
- 4 green onions, sliced
- 1/3 cup pitted kalamata olives, halved
- 1/2 cup olive oil
- 1/2 cup lemon juice
- 2 Tbsp. snipped fresh basil or 2 tsp. dried basil, crushed
- 2 Tbsp. snipped fresh oregano or 2 tsp. dried oregano, crushed
- 1 Tbsp. anchovy paste (optional)
- 4 to 6 cloves garlic, minced
- 1/4 tsp. salt
- 1/4 tsp. ground black pepper
- 1 cup crumbled feta cheese (4 oz.)
