TURKEY ROLL UPS

In a small bowl combine cream cheese, carrot, zucchini, cranberries, dill weed, and garlic powder
- One 8-ounce pkg. fat-free cream cheese
- 1/4 cup finely shredded carrot
- 1/4 cup finely shredded zucchini
- 1 tablespoon dried No Sugar Added cranberries, chopped
- 1/2 teaspoon dill weed
- Pinch of garlic powder
- Kosher salt and black pepper to taste
- Six ounces roasted turkey breast, deli sliced
PORCUPINES IN CHILI FLAVORED SAUCE

Combine chili powder, garlic salt, sugar, cumin, oregano and tomato juice
- 2 tsp. chili powder
- 1 tsp. garlic salt
- 2 tsp. brown sugar
- 1/4 tsp. each ground cumin, oregano
- 3 c. tomato juice
- 1 egg, slightly beaten
- 2 tsp. prepared mustard
- 1 # ground beef
- 1/2 c. raw rice
- 1/2 c. each finely chopped onion, green pepper, celery
- 2 tsp. salt
- 1/4 tsp. pepper
CHOCOLATE CUPCAKES WITH A KICK

Preheat oven to 350 degrees F
- 1 pkg. 2-layer-size chocolate or devil's food cake mix
- 1-1/4 cups sour cream
- 3 eggs
- 1/3 cup cooking oil
- 2 Tbsp. instant coffee crystals
- 1/2 to 1 tsp. ground chipotle chile pepper
- 1 11.5-oz. pkg. semisweet chocolate chunks
- 2 tsp. all-purpose flour
- 1 recipe White Frosting
- 2 oz. semisweet chocolate, chopped
- 1/4 cup whipping cream
CUCUMBER DILL SPREAD

In a mixing bowl, beat cream cheese until smooth
- 2 - 8 oz. pkgs. cream cheese, softened
- 2 tsp. lemon juice
- 2 tsp. minced onion
- 1/2 tsp. dill weed
- 1/4 tsp. horseradish
- Dash hot pepper sauce
- 3/4 c. finely diced seeded cucumber
STEAK BUTTER

Process all ingredients in a food processor until well combined
- 1 pound butter, softened to room temperature
- 2 ounces of brandy (or a touch more :-))
- 1 tablespoon coarse black pepper
- 2 1/2 tablespoons fresh chopped parsley
- 3 to 4 cloves fresh chopped garlic (your choice, your taste)
- 2 teaspoons Dijon mustard
RED VELVET CUPCAKES WITH CREAM CHEESE FROSTING

Preheat the oven to 350 degrees F
- For the Cream Cheese Frosting:
- 2 1/2 cups all-purpose flour
- 1 1/2 cups sugar
- 1 teaspoon baking soda
- 1 teaspoon salt
- 1 teaspoon cocoa powder
- 1 1/2 cups vegetable oil
- 1 cup buttermilk, room temperature
- 2 large eggs, room temperature
- 2 tablespoons red food coloring
- 1 teaspoon white distilled vinegar
- 1 teaspoon vanilla extract
- 1 pound cream cheese, softened
- 2 sticks butter, softened
- 1 teaspoon vanilla extract
- 4 cups sifted confectioners' sugar
- Chopped pecans and fresh raspberries or strawberries, for garnish
TURKEY ROULADE WITH SWISS CHARD

Bring a large pot of salted water to a boil
- Kosher salt
- 1/2 cup arborio or other medium-grain rice
- 2 bunches (about 2 pounds) Swiss chard, stems removed
- 12 ounces pancetta, finely chopped
- 2 cloves garlic
- 1/2 teaspoon chopped fresh rosemary
- 1/4 teaspoon red pepper flakes
- 4 ounces gruyere cheese, cut into 1/4-inch cubes
- 1/2 cup finely chopped scallions
- 1/2 cup chopped fresh basil
- 1/4 cup chopped fresh parsley
- Grated zest of 1 lemon
- 1/2 teaspoon freshly grated nutmeg
- Freshly ground pepper
- 4 large eggs, beaten
- 1 skin-on, boneless turkey breast half (3 to 4 pounds)
- 3 tablespoons extra-virgin olive oil
- 3 cups white wine
BUTTERSCOTCH BROWNIES

Put in well greased 8” square pan, bake 25 min
- Beat until creamy. Add:
- 1 c. brown sugar
- 1/2 c. oil
- 1 egg.
- 1 tsp. baking powder
- 1/2 tsp. salt
- 3/4 c. flour
- 1 tsp. vanilla
- 1/2 c. chopped nuts.
SWEET POTATO CUPCAKES

- 2 cups all-purpose flour
- 2 tsp. baking powder
- 1 tsp. ground cinnamon
- 1/2 tsp. baking soda
- 1/4 tsp. salt
- 1 cup butter, softened
- 1-1/2 cups sugar
- 3 eggs
- 1 17.2-oz. can vacuum-packed sweet potatoes (unsweetened), mashed
- 1/2 tsp. vanilla
- 1 Recipe Cream Cheese Frosting, below
- Finely shredded orange peel

- 1/2 c. cocoa
- 3 tsp. soda
- 3 c. flour
