  • 2 gloves garlic, minced
  • 3 pounds sweet potatoes, peeled and cut into 3/4” pieces
  • 2 – 14 oz. cans chicken broth
  • 1 – 14 oz. can unsweetened coconut milk
  • 1 2” piece fresh lemongrass or 2 tsp. finely shredded lemon peel
  • 2 tsp. grated fresh ginger
  • 1/4 tsp. ground white pepper
  • 1/8 tsp. salt
