HIGH-TECH CRACKERS

ASIAN PORK TENDERLOIN

Preheat oven to 400. Lightly coat baking with spray
- 2 tbs. sesame seeds
- 1 tsp. ground coriander
- 1/8 tsp. cayenne
- 1/8 tsp. celery seed
- 1/2 tsp. minced onion
- 1/4 tsp. ground cumin
- 1/8 tsp. ground cinnamon
- 1 tbsp. sesame oil
- 1 # pork tenderloin, slices into 4 – 4 oz. portions

HOMEMADE SOFT PRETZELS

- 1-1/2 c. warm (110-115 degrees F) water
- 1 tbsp. sugar
- 2 tsp. kosher salt
- 1 pkg. active dry yeast
- 22 oz. flour, approximately 4-1/2 c.
- 2 oz. unsalted butter, melted
- Vegetable oil for pan
- 10 cups water
- 2/3 c. baking soda
- 1 large egg yolk beaten with 2 tbsp. water

PASTIES

- 1.5 teaspoons salt
- 1.5 cups of shortening (Crisco or Lard)
- 1 cup of water (approximately)
