MEXICAN BEAN SPICE MIX

- 1/2 c. cumin
- 1/2 c. chili powder
- 4 Tbsp. salt
- 1-1/2 c. dried minced garlic

- 1-1/2 c. dried minced onions.
LEBKUCHEN CAKE WITH WHITE CHOCOLATE FROSTING

For syrup: Using vegetable peeler, remove peel (orange part only) from oranges in strips
- Honey Syrup
- 2 to 3 large oranges
- 1/2 cup honey
- 2/3 cup orange juice
- Cake
- 3/4 cup (1 1/2 sticks) unsalted butter, room temperature
- 3/4 cup firmly packed golden brown sugar
- 1 tablespoon vanilla extract
- 1 1/4 teaspoons ground cinnamon
- 3/4 teaspoon ground cloves
- 3/4 teaspoon ground nutmeg
- 3/4 teaspoon ground allspice
- 1/2 teaspoon salt
- 2 large eggs, room temperature
- 1 3/4 cups all purpose flour
- 1 1/2 teaspoons baking soda
- 3/4 teaspoon baking powder
- 2/3 cup half and half
- 1 tablespoon lemon juice
- 2/3 cup dried currants
- Frosting
- 12 ounces imported white chocolate (such as Lindt), chopped
- 1 cup (2 sticks) unsalted butter, room temperature
- 12 ounces cream cheese, room temperature
- 3 cups toasted sliced almonds
- Orange slices or orange peel ribbon
BANANA BREAD

- 1/2 c. fat
- 1 c. sugar
- 2 eggs
- 3 tbsp. buttermilk
- 3 bananas, mashed

- 1 pound(s) flank steak, cut in half lengthwise and thinly sliced across the grain
- 1/2 cup(s) chicken broth
- 3 tablespoon(s) dry sherry
- 1 teaspoon(s) sugar
- 3 teaspoon(s) sesame oil, coarsely chopped
- 1 tablespoon(s) cornstarch

Samoas Cupcakes

Cupcakes: 1. Preheat oven to 350° and line 24 muffin tins with cupcake liners
- For the Cupcakes
- 2 cups sugar
- 1-3/4 cup flour
- 3/4 cup Cocoa (I used Hershey’s special dark)
- 1-1/2 teaspoons baking powder
- 1-1/2 teaspoons baking soda
- 1 teaspoon salt
- 2 eggs
- 1 cup milk
- 1/2 cup vegetable oil
- 1 teaspoon vanilla
- 2 teaspoons coconut flavoring
- 1 cup coconut, packed
- 1 (scant) cup boiling water
- For the Salted Caramel Buttercream
- 2 sticks butter, softened
- 2 teaspoons vanilla extract
- 1/2 cup caramel topping, plus more for drizzling (I used butterscotch caramel)
- 1 pound powdered sugar (about 4 cups)
- 1 teaspoon salt
- For the Homemade Chocolate Syrup
- 1/4 cup cocoa powder (I used Hershey’s special dark)
- 1/4 cup granulated sugar
- 1/4 cup cold water
- pinch of salt
- 1/2 teaspoon vanilla extract

CHICKEN AND GNOCCHI SOUP

- 1 cup chicken breasts, cooked and diced (you can use a rotisserie chicken)
- 4 tablespoons butter
- 4 tablespoons flour
- 1 quart half and half
- 1 14 ounce can chicken broth
- 1/2 cup celery, finely diced
- 2 garlic cloves, minced
- 1 cup carrots, finely shredded
- 1 cup onion, finely diced
- 1 cup fresh spinach, coarsely chopped
- 1 tablespoon extra virgin oil
- 1/2 teaspoon thyme
- 1/2 teaspoon parsley
- Freshly grated parmesan cheese – optional
- 1 pound potato gnocchi – can buy this in the gourmet section of many supermarkets

- 1/3 cup Land O Lakes® Butter, softened
- 1 cup water
- 3 Land O Lakes® All-Natural Eggs
- 1 teaspoon maple flavoring
- 1 (1-ounce) square unsweetened baking chocolate, melted
- Frosting
- 1/3 cup Land O Lakes® Butter
- 2 tablespoons firmly packed brown sugar
- 3 1/2 cups powdered sugar
- 1 (8-ounce) package cream cheese, softened
- 1 teaspoon maple flavoring
- Decorations
- chocolate decorator icing
- sweetened dried cranberries, golden raisins, chopped dried apricots and chopped pecans, as desired
