For the Masa: In a large bowl mash sweet potatoes with a potato masher (a food processor will make them gummy)
- Masa (Dough):
- 8 oz. sweet potato, cooked
- 1-1/2 sticks unsalted butter, softened
- 1-3/4 cups all purpose flour
- 2 teaspoons baking powder
- 1 teaspoon salt
- Relleno (Filling):
- 2 tablespoons olive oil (or dende oil)
- 1/2 a small onion
- 3 cloves of garlic, mashed
- 1/2 teaspoon bay leaf, finely crumbled
- 1 teaspoon of salt
- 1 tablespoon green bell pepper
- 1 tablespoon red bell pepper
- 3 tablespoon cilantro or parsley, chopped
- 2 teaspoons lime zest
- 2 thai green chilies or 1 small jalapeno, minced (optional)
- 8 oz. shrimp, peeled and deveined, chopped fine
- 2 tablespoons fresh lime juice
- 1-1/2 tablespoons flour
- 1/2 cup coconut milk
- 1 large egg lightly beaten with 1 tablespoon water

- 1 1/2 teaspoon kosher salt

- several dashes of hot sauce, to taste

- Savory Empanada Dough Ingredients(makes 11):
- 3 TBSP vegan butter
- 1 1/2 TBSP olive oil
- 1/2 cup lukewarm water
- 1/2 tsp salt
- 2 cups flour
- Savory Empanada Filling Ingredients:
- 1/3 cup chopped sweet onion
- 13 grape tomatoes
- 2 small chopped purple garlic cloves
- 1 medium portabella, chopped
- 1-2 TBSP olive oil
- 1 TBSP butter
- 2 TBSP dehydrated veggie soup mix
- pinch of salt and pepper
- 1 TBSP white wine
- Sweet Empanada Dough Ingredients (makes 11):
- 3 TBSP vegan butter
- 1 1/2 TBSP canola oil
- 1/2 cup lukewarm water
- 1/2 tsp salt
- 3 TBSP sugar
- 2 cups flour
- Sweet Empanada Filling Ingredients (yields leftovers!):
- 3/4 lb sweet potato (steamed for 20-25 minutes in steamer)
- 2 TBSP honey
- 1/2 cup brown sugar
- 1 tsp cinnamon
- 1/2 tsp nutmeg
- 1/4 tsp cloves
- (top with cinnamon and sugar)
- 1 TBSP melted butter, to cover all of the empanadas with.

- 1/2 tsp Garlic Powder

- 2 tsp Hot Sauce
- Salt and pepper to taste
- Egg wash (1 egg whisked with 1 Tablespoon water)
- 1/2 cup Sour Cream
- 1 tsp chopped Green Onion/Scallion
- 1/2 cup chopped Cilantro
- 1/4 tsp Cayenne Pepper
- 1/4 tsp smoked Paprika
- Salt to tasteIn a large bowl, combine shredded chicken, cheddar cheese, chopped green onions, jalapeno and cilantro, garlic powder, ground cumin, hot sauce and salt and pepper. Mix well.

- 2 ounces canned tomato sauce (1/4 can)
- 5 tbsp part-skim shredded Mexican cheese blend
- 1 cup (5 oz) unbleached all purpose or whole wheat flour
- 1 1/2 teaspoons baking powder (make sure it’s not expired or it won’t rise)
- 3/4 teaspoon kosher salt (use less if using table salt)
- 1 cup non-fat Greek yogurt (use Stonyfield or Fage, not regular yogurt, not Chobani, it will be too sticky)
