Season the duck breast halves with salt and pepper

  • 2 boneless duck breast halves - (4 to 6 oz ea)
  • Salt to taste
  • Freshly-ground black pepper to taste
  • 3 tablespoons sherry vinegar
  • 7 tablespoons extra-virgin olive oil
  • 1 head radicchio washed, and torn into 1" strips
  • 2 heads frisée washed, and trimmed of thick green parts
  • 1/2 cup walnuts toasted, and coarsely chopped
  • 2 oranges peeled, and cut into segments
