OATMEAL RAISIN COOKIES

Ingredients
- 2 cups (500 ml) all purpose flour
- 1/2 tsp (2 ml) baking soda
- 1/2 tsp (2 ml) ground allspice
- 1 cup (250 mL) butter or margarine
- 1 cup (250 mL) packed brown sugar
- 1 cup (250 mL) quick-cooking oats
- 1 tsp (5 mL) ground cinnamon
- 1/2 cup (125 mL) corn syrup
- 2 large eggs, lightly beaten
- 11/2 cups (375 mL) raisins
- 2 tsp (500mL) baking powder

Step 1
Combine flour, baking powder, baking soda, cinnamon and allspice; set aside. In a
large saucepan, melt butter over very low heat. Remove from heat stir in sugar, corn
syrup and eggs until smooth. Stir in oats, then gradually stir in
flour mixture until a smooth, soft dough forms. Stir in raisins Cover tightly and
refrigerate at least one hour.
Drop dough by tablespoonfuls 2 inches (5 cm) apart on lightly greased baking sheet.
Bake at 350 F (180 c) for 12 to 15 minutes or until slightly firm and lightly browned.
Cool cookies on baking sheet for one minute; remove to rack to cool. Makes 31/2
dozen cookies.
