White Fish Piccata

Ingredients
- 2 white fish fillets (halibut, tilapia, barramundi, etc.)
- 2 T. butter
- Pinch of salt and pepper
- 3 green onions, chopped
- 2 cloves of garlic, minced
- Juice of 2 large lemons, zest of one
- 1 T. capers
- sliced lemon for garnish

Preparation
Step 1
Melt butter on medium high heat. Pat fish fillets dry and salt and pepper. Place in pan and cook on each side for about 3 minutes (longer for a thicker fillet). If the butter starts to brown, reduce heat to medium. Remove from pan and plate.
Add onion and garlic to the remaining butter in the pan. Add lemon juice and zest and cook for about 1 minute to reduce down. Add capers and cook just another 30 seconds or so to heat. Pour over fillets and garnish with lemon slices.
