Step 1
In a pot heat tbsp EVOO and add 1 medium chopped onion and sautee, then add 1 diced medium potatoe and 1 c water or chicken broth and bring to a boil, cover, reduce heat to simmer. Cook 5-10 minutes and remove from heat when potatotes tender. Then Scoop half of this mix into a food processor and puree. Then scrape back into pot. Without washing bowl, add 6 oz thawed frozen corn and add 1 1/2 c 1 percent low fat milk and puree until smooth. Add corn pureee to potatoe onion mixture and stur in other 6 oz thawed frozen corn and add 1/4 c diced red bell pepper, 4 oz chopped ham and 1/2 tsp dill weed. Add salt and pepper to taste. Cook gently for 5 minutes and serve hot. Can store in fridge up to a week. WE TRIED THIS 11/15/11 AND IT WAS REALLY GOOD, RYAN REALLY LIKED IT.
