Cheesy Potato Skins

Ingredients

  • 4 Medium Russet Potatoes
  • 1/3 cup sour cream
  • 1/4 cup (1/2 stick) butter
  • 1 1/2 cups shredded Cheddar Cheese
  • 5 slices Cooked Bacon
  • 1 tablespoon dry ranch mix

Preparation

Step 1

Bake potatoes in 400 degree oven for about 1 hour
as the potatoes are baking

mix sour creme with dry ranch mix
store in refrigerator

When potatoes are cool enough to handle

Cut each potato into 3 equal length wise slices
save the middle of each potato for another dish
taking both outside shells
scoop some of the potato out of each shell leaving about
1/4 inch of potato in the shell
brush entire surface of each potato skin inside and out with melted butter
place the skins on a cookie sheet cut side up and broil them for about 6 minutes or until the edges begin to turn dark brown
sprinkle with 2 to 3 Tablespoons of Shredd Cheddar Cheese
into each skin
crumble bacon on top of cheese
broil the skins for 2 more minutes or until the cheese is thoroughly melted
serve hot arrange on a plate surrounding a small bowl of the ranch sour creme

you may also mash all potato that is remove from potatoes and add the sour creme ranch to this and then sprinkle with cheese and bacon and broil for 2 to 3 minutes more

may also sub bleu cheese instead of cheddar

the sky is the limit it is what ever you like
