Ingredients

  • 4 T unsalted butter
  • 2 med sweet potatos
  • 2 1|2 c milk
  • 1 T thyme
  • 1 T light brown sugar<2 t coarse sea salt
  • 1 |2 t ground pepper
  • 1 c finely ground cornmeal
  • 4 large eggs, separated
  • 2 t baking powder

Preparation

Step 1

Preheat oven 400 f. Generouslyy grease 2 qt casserole dish with 1 T butter.
Wrap potatos in foil and bake 45 to 55 minutes until soft to touché Cool, remove and dissard peels. In large bowl mash potatos.
Reduce oven to 350 f. In large saucepan, bring milk, thyme, sugar, salt and pepper to a low boil. In slow steady stream whish cornmeal into milk mix. Cook, whisking constatnly, 4 to 5 minutes till mixture is thick and pulls away from bottom of pan. Remove from heat,cool slightly, add potatos, egg yolks, remaing 3 T butter and baking powder.
In large bowl beat egg whites until soft peaks are formed. Gently fold into potato mix.
Spoon into prepared baking dish.

Bake35 to 40 minutes. Edges will be firm and centre a little soft. Remove from oven. Let stand 10 minutes. Serve warm
