Ingredients

  • 4 quarts water
  • 1 1/2 tsbp salt
  • 2 1/2 cups tomato juice
  • Avaialbale beef stock or bones
  • 1/2 cup beef consomme
  • 1 1/2 cup barley
  • 3 carrots, chopped
  • 2 celery ribs, chopped
  • 1 onion, chopped
  • 4 cups potatoes chopped
  • 1 parsnip, chopped
  • 1 rutabegga, chopped
  • 1 can (28 0z) chopped tomatoes
  • 1 can corn
  • 1 cup green beans
  • 1 cup peas

Preparation

Step 1

Boil water, salt, tomato juice and beef stock. add barley, carrots, celery, onion, potatoes, parsnip and rutabegga. Simmer for 1 1/2 to 2 hours.
Add chopped tomatoes, corn, green beans and peas.
Serve when heated.
