Apple Bread Pudding

Ingredients

  • 1 loaf white bread
  • 100 gm butter
  • 4 apples, Granny Smith
  • 1/2 tsp grated lemon rind
  • 1 x lemon juice
  • 1/2 tsp grated orange
  • rind 1/2 x orange
  • juice of 1/3 cup sugar (caster) 1/3 cup raisins 1/10 tsp cloves
  • ground 1/2 tsp cinnamon
  • ground 500 ml vanilla custard
  • 1 cup cream

Preparation

Step 1

Remove crusts from bread and butter each slice generously on one side. Generously butter a 1.25 litre rectangular baking dish and line base and sides completely with bread, buttered side inwards. Peel, core and cut the apples into small chunks and toss with the lemon, orange, sugar, raisins, cloves and cinnamon. Pack half the apple mixture into the breadlined dish, dot with some butter, cover with a layer of bread butter side up. Fill with remaining apple and cover top with another layer of bread, buttered side upwards. Press down lightly. Cover loosely with foil and bake 190C/350F for 30 to 40 minutes, removing foil 10 minutes before the end. Serve warm with vanilla custard and whipped cream.
