Squash Casserole

Ingredients
- 4 cups squash, cut into bite size chunks
- 1 cup chopped onion
- Salt and pepper to taste
- 1 stick of butter
- 1 box Stove Top Stuffing mix
- 8 oz sour cream
- 1 can cream of chicken soup

Preparation
Step 1
Boil squash, onion and salt and pepper til tender. Drain. Melt butter in pan and add box of stuffing mix and seasoning packet. Mix well. Put half of stuffing mix in the bottom of a casserole dish. Mix together sour cream, cream of chicken soup, and squash/onion mixture. Spread the mixture over the bottom stuffing. Spread the remaining stuffing over the top. Bake at 350 degrees for 30 minutes or until the stuffing is crispy and brown.
