Potato Leek Soup

Ingredients

  • 4 large leeks
  • 2 TB olive oil
  • 4 cloves garlic
  • 4 TB flour
  • 12 c water
  • 4 potatoes (cut in chunk)
  • 4 sweet potatoes
  • 3 tsp salt
  • 1/2 tsp pepper
  • 4 TB dill

Preparation

Step 1

Clean leeks and slice thinly.
Heot oil, add leeks and cook on low heat for 5 minutes (until soft).
Add garlic and cook 3 more minutes.
Stir in flour. Cool.
Gradually blend in water and potatoes and spices (not dill).
Bring to a boil and simmer.
Add dill.
May need to add water. mash some of the potatoes to make it thicker.
