  • 1 TEASPOON BAKING SODA
  • 3/4 TEASPOONS SALT
  • 1/4 TEASPOON GROUND NUTMEG
  • 6 TABLESPOONS COLD BUTTER, CUT UP
  • 1 CUP BUTTERMILK
  • 1 GRANNY SMITH APPLE, PEELED, CORED & DICES (1 CUP)
  • 4 OZ. SHARP CHEDDAR CHEESE, CUT INTO VERY SMALL
  • DICE (ABOUT 1 CUP)
  • 1 EGG WHITE, LIGHTLY BEATEN

Step 1

HEAT OVEN 400. LIGHTLY COAT A LARGE BAKING SHEET WITH NONSTICK COOKING SPRAY.
COMBINE FLOUR, ½ CUP OF SUGAR, BAKING POWDER, BAKING SODA, SALT & NUTMEG IN A LARGE BOWL. ADD BUTTER, CUT IN WITH FORK (OR HANDS) UNTIL MIXTURE RESEMBLES COARSE CRUMBS. WITH FORK, STIR IN BUTTERMILK, APPLES & CHEESE PIECES JUST UNTIL MIXTURE FORMS DOUGH.
TURN DOUGH OUT ONTO FLOURED SURFACE. KNEAD 6-7 TIMES. DIVIDE DOUGH IN HALF AND GATHER EACH INTO BALL. PAT EACH PORTION INTO A 6-7 INCH CIRCLE: PLACE ON COATED BAKING SHEET. USING SHARP KNIFE COATED WITH NONSTICK COOKING SPRAY CUT EACH ROUND INTO 6 EQUAL WEDGES. BRUSH WITH EGG WHITE, SPRINKLE WITH SUGAR.
BAKE IN 400 OVEN FOR 20-25 MINUTES OR UNTIL GOLDEN BROWN.
