Chili Chicken with Black eyed Peas and Rice

Ingredients
- 1 tbsp. olive oil
- 1 large onion chopped
- 1 red bell pepper chopped
- 1 clove garlic chopped
- 3 cups cooked chicken
- 3 cups cooked rice
- 2 cups sour cream
- 2 cups black eyed peas
- 1 cup small curd creamed cottage cheese
- 1/8 red pepper sauce
- 2 cups shredded cheddar cheese
- 2 cans diced chilies, drained

Preparation
Step 1
Heat oven to 375. Grease dish. Heal oil and cook onion, pepper and garlic. Stir in remaining ingredients except cheese and chilies. Spread half of the chicken mixture in baking dish; sprinkle 1 cup of the cheese and the chilies. Spread remaining chicken mixture over chilies; sprinkle with cheese. Bake uncovered 25 to 30 minutes or until heated through. Garnish with chili pepper fans and cilantro springs if desired.
