Delicious crispy yummy salmon cakes may use tuna or crab also. Great way to use up mashed potatoes too!
- 1 cup hot mashed potatoes seasoned to taste with salt & pepper
- 1 cup flaked salmon or other seafood may used canned if fresh not available but drain liquid
- 3 finely chopped green onions if desired
- 2 tsp lemon juice
- 1 egg
- Cracker crumbs
Preparation time 15mins
Cooking time 30mins
Combine potatoes and salmon then add lemon juice, green onions if you like. Shape into patties whatever size you like, roll in crumbs then in egg and again in crumbs. Messy I know but will be so worth it! During this process your oil should be heating in a frying pan. Fry at about 380 degrees for 3-5 minutes each side until brown and crispy. Drain on paper towels and enjoy!
