Mini Beef Wellingtons

Ingredients
- 7 oz frozen puff pastry
- 1/3 cup Boursin cheese, about 2 1/2 oz room temp
- 1/2 lb trimmed beef tenderloin, cut into 1/2 cubes
- salt and pepper
- 1 large egg, slightly beaten

Preparation
Step 1
Preheat oven 400.
Roll out puff pastry to a 7 1/2 x 15 inch rectangle, 1/8 inch thick. Cut into 11/2 in squares.
Spoon a scant 1/4 tsp of Boursin in the center of each square, season beef with salt and pepper, and set on square. Fold over neatly. Can be prepared and frozen.
Lightly brushe each pastry with the beaten egg, Bake 10-12 minutes.
