Ingredients

  • Crust:
  • 2 cups quick-cooking oats, finely ground
  • 3/4 cup shortening
  • 1/2 cup granulated sugar
  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 cup buttermilk
  • Filling:
  • 3 cups chopped dates (about 1 pound)
  • 1 cup granulated sugar
  • 1 cup water
  • 1-2 tablespoons lemon juice
  • Glaze:
  • 1 1/2 cups powdered sugar
  • 1/8 teaspoon salt
  • 1 teaspoon vanilla extract
  • 3 tablespoons milk

Preparation

Step 1

Step 1: In a blender or food processor, process oats until finely ground; set aside.
Step 2: Lightly grease a 13x9x2-inch baking pan; set aside.
Step 3: Preheat oven to 400 degrees F.
Step 4: In a large bow, cream together shortening and sugar with an electric mixer.
Step 5: In a medium bowl, whisk together oats, flour, baking soda, and salt.
Step 6: Add oat mixture to sugar mixture alternately with buttermilk. Stir well.
Step 7: Divide dough in half. On a lightly floured surface roll out half of dough to fit the prepared 13x9x2-inch baking pan.; set aside.
Step 8: In a 2-quart saucepan, combine dates, sugar, water, and lemon juice. Bring to a boil stirring constantly. Cook until thickened, about 6 minutes. Cool for 10 minutes. Spread over crust.
Step 9: Roll remaining half of dough to fit pan; place over filling and seal edges.
Step 10: Bake for 15-20 minutes or until crust is golden brown.
Step 11: In a medium bowl, combine all glaze ingredients. Spread over bars while war. Cool before cutting into bars.
